I can’t believe it’s already Easter weekend! I swear, this year is passing by so fast. But seriously, I love the choice of recipes you decided to round-up: brunch is the absolute best for Easter! (and for Mother’s Day as well).
These all sound delicious. I like the shrimp and strawberries idea the best. Can you believe, though, I have been here thinking that Easter is next weekend so I had to spend the day planning for Sunday. I blame it on the kids Spring break coming too early. Usually they are out the week of Easter weekend, but they switched it up on us this year and now I’m just a wreck.

All of these look delicious! I may be making a pasta salad as a side dish for our Easter dinner. I made one last week but it didn’t last long. The kids ate it all up. Tomorrow I may make some wild rice, roasted veggies and salmon cakes. I may make a Spinach fritata for Easter brunch. Your risotto looks yummy. Sadly, I have to steer clear of the sweet stuff.
Actually, even the ‘sweet stuff’ is clean and healthy…if you take a look at the actual recipe you’d be surprised how many healthy ingredients are in there!
