5 Back-To-School One-Pot Wonders

It’s back to school time, which also means “It’s back to finding time to balance everything in ONE day, plus cook 3 meals a day for the entire family!” (Let’s not forget that if there is a baby or little ones 2 and under this task can be even more daunting!)

I’ve been there (not this year thankfully as I’m still on maternity leave-YAY for me!) and done that…and I don’t know how I “done that” (just like I’m sure many of you say to yourselves on a day to day basis!).

The key to avoiding stress in the kitchen (and having more time for homework, family time, etc) is preparation…and of course, quick and easy meals. What could be easier and quicker than a meal that only involves ONE pot?

Make ahead on the weekend for dinner and save the leftovers for lunch the following day. Better yet, store some in the freezer (those that apply) for a lazy, I mean rainy day! 😉

Pasta e Fagioli
A one-pot wonder that the entire family will enjoy! It tastes even better the day after and is the perfect consistency to mash and set aside for baby (8+ months) to eat.

Italian Rice Salad
Another hearty, energy-packed meal (and one of our faves…Just had it for lunch today!). Simply boil the rice, prep the condiment ingredients then combine. This one tastes even better the longer the flavours sit so it’s a perfect leftover meal.

Creamy Chickpea Hummus
Who doesn’t love hummus?! Make a huge batch, serve some for dinner as a side to grilled chicken or as the main meal.  Surprise the little ones and fill their lunch boxes with a variety of dipping “tools” (i.e., crackers, pita chips, fresh veggies, etc)

White Bean Kale and Chicken Chili
A hearty lunch and thermos-appropriate meal for a cool September day. This chili is packed with protein, Vitamin A and C which makes it a much healthier option than regular chili.

Pesto Ricotta Pasta Salad (An oldie but definitely a goodie!)
A three-ingredient easy to make pasta, appropriate for children 12+ months.  All you need is fresh ricotta, homemade pesto (pre-made and thawed or store bought) and your (our your children’s) favourite pasta. Quick. Easy. Delicious!
