This creamy vegan chia seed pudding with date paste is made with creamy Greek yogurt, nutty coconut milk, and plump chia seeds, topped with a rich, naturally sweet, lemon and cinnamon-infused date paste.
This recipe cannot be any healthier for you-Medjool dates are rich in fiber, Greek yogurt is packed with protein and chia seeds are loaded with calcium, manganese, and heart-healthy omega 3’s.
Chia pudding has become one of my favourite recipes for breakfast and snacks, mainly because it is so delicious and healthy, but also because the recipe is foolproof!
I often whip this pudding together in the evening and let it sit overnight in the fridge. This is when the magic happens-the tiny, crunchy chia seeds soak up all the creamy yogurt and milk and transform into gelatinous little pearls.
All you have to do is remove the chia pudding from the fridge in the morning, mix in your favourite ingredients, in this case the date paste, and serve! My kids love this chia seed pudding with date paste (even more so when I serve it as a parfait) and I love that it is so healthy for them.
On that note, no more excuses for sugary breakfast cereals for the kids nor the age-old affirmation, ‘I don’t have any time to make breakfast in the morning.’
Moms and dads can make this chia pudding the night before, store in a small mason jar in the fridge overnight, and pop in your lunch bag the following morning!

That’s a really artistically arranged bowl of baby food! Any baby would be lucky to get that. I like the idea of introducing new flavors and textures when babies are younger so they’re less adverse to trying new things later.

I haven’t tried Chia seeds yet. I need to buy some. I asked the health food store what they tasted like. They are new so they had samples of a few other things so I asked about them. I probably would be the only brave person in my family to try them.
They don’t have any flavour really, which is a positive thing because they soak up the flavours of whatever you mix them with.

This looks like a great breakfast option. I am always looking for things to feed my kids other than sugary cereals. My kids are really picky eaters so I have a hard time finding things they will eat. I will have to try this and see if they will eat it!
You could start with a small batch to see if they like it…and if they don’t, then you can eat it all 😉

I love Chia seeds and I forget how versatile they are. I am not a huge date fan, but I know a lot of people that are and this would be perfect for them.
If you don’t like dates, you should try another chia pudding recipe from the Blog…one of my faves is chocolate chia pudding!
