This creamy, dreamy vegan chocolate chia pudding only requires a few ingredients to make and will satisfy your chocolate cravings in a healthy way.
Superfood chia seeds are the base of this nutritious pudding and the fact that it’s raw means it requires no cooking time at all! Not only is this pudding tasty, but it’s packed with fibre, protein, iron, calcium, and omega-3 fatty acids.
This nutritious and delicious pudding can be made the night before for a decadent breakfast or mid-day snack. Or, prep it in the morning for a simple dessert to gobble up after a long, stressful day-for you and the kids!
My favorite way to incorporate chia seeds into my diet is as a substitute for eggs however, they can be added to so many different recipes as a thickening agent, especially in raw puddings and cakes.
Something magical happens to those crunchy little chia seeds when they are soaked in liquid-they literally transform into plump and juicy tapioco-like pearls. On a side not, if you’re not a fan of that tapioca-like consistency you can simply puree the pudding once the chia seeds have soaked up the liquid for a smoother, creamier texture.
The beauty of this vegan chocolate chia pudding is that once you have the chia seed-to-liquid ratio right, the flavor possibilities are endless.
For example, substitute coconut milk with almond or soy milk, cocoa powder with carob powder, omit the cinnamon and add a splash of vanilla, or substitute the maple sryup for agave, honey (for non-vegans) or pureed dates.

I absolutely love pudding. It is one of my favorite desserts. I love this healthy version.
To be honest, I’ve neve really been much of a pudding fan. I now realize it’s most likely because of the gelatinous texture. Chia seeds are also somewhat gelatinous however, I’ve come to enjoy them more…probably because I know that they healthy and I know what’s going in my pudding! 😉
I can’t have gluten or corn of any kind. It’s really hard finding foods and recipes without both. This sounds delicious!

I think a lot of people don’t buy them because they don’t know how to incorporate them into meals. They are so versatile though!

That’s all I use…I find it much lighter and delicate tasting than other plant-based milks.

I been seeing chia online and even on TV, but have never tried it yet. And the only pudding that I’ve tasted, I think, is rice pudding. This is interesting. Can’t wait to try it.
It has the same consistency as rice pudding except not as grainy and chunky. It’s much smoother!

They are pretty easy to find…in all health food stores and most grocery stores. The problem is they’re a bit pricey!

I have been looking for a recipe to use chia seeds with. I bought some a while back and had not yet found a use for them. This recipe looks tasty. It almost looks like a melted Crunch bar. I would eat that!

Yes, they are very healthy! You can even just sprinkle them on yogurt, smoothies and salads!

I am not sure if I would like chia seeds in my pudding, but I think they would be a great addition to other dishes with a crunchy texture. I’m going to add some to my apple crisps in the fall–hopefully it will work out.
