This recipe is a revamped rendition of my usual energy bar recipes. (I’d pick just one to highlight in this post but there are just too many to choose from!).

The creamy cashews and chewy dried cherries basically transform these energy bars into crunchy, sweet, cherry pie-flavoured squares of perfection!

Note: The only thing bad about this recipe is that it doesn’t yield a large quantity of bars (oh, how I wish I had a super-sized food processor so I could make a lifetime supply!). I usually double the recipe…which still only lasts me about a week!

Nevertheless, you won’t mind making these over and over (and over again)-they are just THAT good!

They also freeze well, make an ideal on-the-go snack and lend to a variety of substitutions, based on your personal preferences (find some HERE.).

(Yields 6 2 by 3 inch bars)
1/2 cup raw cashews
1/2 cup dried cherries
1/2 cup Medjool dates, pitted
1/4 cup unsweetened coconut flakes
1 tbs. chia seeds (optional)
3 tbs. almond butter
2 tbs. organic maple syrup or other liquid sweetener
1 tsp. vanilla extract
1 tbs. unsweetened milk of choice or distilled water
1/4 tsp. cinnamon
1/8 tsp. sea salt

Blend all the dry ingredients in a large food processor until finely ground but not completely pulverized-you want some consistency to the bars. I sometimes (as in this case) grind them just enough to break apart the nuts so my bars are extra-crunchy!

Add the almond butter, maple syrup, vanilla, coconut milk, and blend again until combined. The mixture will be somewhat sticky but still maintain a uniform shape when pressed together.

Line a 9 x 12 biscotti pan with parchment paper then add the mixture. Press down with your hands (coated with cooking spray or coconut oil) until uniform and firm.

Set in the fridge for at least 2-3 hours to firm up. Remove then cut into desired portions.

And there you have it-a decadent, sweet, “cherry pie” that’s actually healthy for you!

Store in the fridge for up to one week and in the freezer for up to 3 months.
