Zucchini is one of my favourite vegetables and this double chocolate zucchini bread is just in time for the season. It’s rich, decadent, super dense and super moist…and did I mention gluten-free and naturally sweetened?
Although I love zucchini and I make it very often, I tend to opt for savoury recipes rather than sweet. In fact, this is my first time making zucchini bread. I’m no stranger to adding veggies in baked goods, such as these Chewy Spinach Brownies. My inspiration for this recipe was simply a lone zucchini sitting at the bottom of the crisper in the fridge…and of course, some imagination!
While I often substitute regular flour with a rice flour and oatmeal mix, I made use of a bag of gluten-free flour (also sitting in the pantry). The end result was heavenly!
The zucchini adds a dense bite to the bread, and the addition of Greek yogurt adds even more moistness and balances all the sweetness.
On a side note, this bread is on the denser side so don’t fret when you cut into it and it’s not as “cakey” as regular zucchini bread. We prefer it this way 😉
Ingredients
1 1/4 cups Bob’s Mill gluten-free flour mix (or all-purpose flour)
1 tsp. cinnamon
1 tsp. baking powder
1/4 tsp. salt
1/3 cup cocoa powder
1/4 cup extra virgin coconut oil, melted (butter or applesauce)
3/4 cup maple syrup or sweetener of choice
*This bread is not super-sweet so if that’s what you prefer I would use regular sugar!
2 large eggs
1 tsp. vanilla extract
1/4 cup Greek yogurt
1 medium zucchini (about 1 cup), finely grated
1/2 cup chocolate chips
Preheat oven to 350 degrees.
Whisk eggs in a large bowl then add all the wet ingredients. Whisk until smooth and combined.
Sift in the dry ingredients and mix with a wooden spoon until combined. Pour the batter into a 9″ loaf pan, lined with parchment paper or greased with coconut oil (butter or cooking spray).
Bake in the oven for 50-55 minutes or until a toothpick inserted into the center comes out clean. Remove immediately from the oven and set aside to cool before cutting.
*TIP: Remove the bread when still somewhat moist (i.e., the toothpick should be dry but some batter should still stick to it) so as to maintain the moistness of the bread.
Cut into desired portions and serve!
Store in the fridge for 5-7 days or in the freezer for up to 3 months.

I’ve been looking for a good zucchini bread recipe for the longest time. Most zucchini bread recipes have tonnes of oil in it. You’ve solved my problem, Lisa! 😀 Do you think it would work baking them as individual muffins?
Thanks! I definitely think it would work….the batter is actually quite dense (mostly due to the gluten-free flour) so separating the batter into muffins might actually result in a less dense bread. If you try it, let me know 😉

This looks delicious, but I am not sure I could bring myself to try this. I have a friend who swears by recipes like this but I still can’t try them.
You sound like my husband, lol! He doesn’t understand why we North Americans put veggies in our baked goods!! If I make this, he will eat it, so I guess it’s possible for all misconceptions to go out the roof! You’d just have to try it for yourself and see 😉
i’ve seen so many people make zucchini bread lately. i’ve never tried it myself.. but i am curious! i feel like i need to try some before i try it in my own kitchen. 🙂

This looks so delicious, I am yet to eat a Zucchini bread so I have no idea what it tastes like but if the pictures are any indication I am missing out.
You’ll be surprised at how mild the flavours are….you might even miss the zucchini in there (depending on how much you put in there!).
My friend made something similar a few months ago to this. It was SO good.
I love traditional zucchini bread but figured chocolate would be a great addition!

I’ve made zucchini bread several times, but I don’t think I’ve ever had chocolate zucchini bread and we all know that chocolate makes everything better. I would love to have a big slice for breakfast. Looking at your pictures made me hungry!

I made this yesterday. It was so easy to make and it tastes delicious! Alessandro was sleeping so I love recipes that do not require loud blenders/mixers 🙂 Unfortunately my boys wouldn’t give it a try. Alessandro was convinced that I used bananas. Once I finally convinced him to try it he split his piece in half in search for chocolate chips and of course he found a sliver of zucchini!! lol Story of my life…now with picky eaters times two. Sal is just like his brother!! Oh well…more chocolate zucchini bread for me! lol
