If you’ve tried my raw energy bar recipes; Chocolate Almond Butter, Lemon Coconut, Cinnamon Pecan, Apricot Honey, Chocolate Coconut, (and loved them as much as I do) then you’re going to love these!
I’ve switched up the recipe this time around and prepared these delicious cookies with fresh hazelnuts and added some chewy Goji berries for an extra depth of sweetness!
They are a perfect all natural, healthy on-the-go snack for kids AND parents, and not to mention they are packed with natural sugars and protein so a little goes a long way.
Ingredients
(Yields 9 small cookies)
1 1/4 cup raw hazelnuts
1 tbs. raw cacao powder (or cocoa powder)
1/4 cup goji berries
8 large Medjool dates
2 tbs. almond butter
2 tbs. raw honey
2 tbs. cacao nibs (or chocolate chips)
1/4 tsp. cinnamon
1/8 tsp. salt
Place all dry ingredients (including berries, dates, and chocolate chips) in a small food processor and blend until combined.
The mixture will be dry and crumbly (as pictured).
*Pulse the mixture for less time if you prefer a chunkier texture to the cookies.
Add honey and almond butter and blend again until combined.
The mixture will still be crumbly but sticky enough to come together to form patties.
Quickly form small cookies (size as desired) by rolling the mixture in your hands and then flattening to form a patty.
*TIP: To avoid a sticky mess, move as quickly as possible! The longer you work the mixture, the more the natural oils are released (the nuts release oil when pureed AND the heat from your hands will continue to release the oils!).
Place on a clean plate and let sit in the fridge for at least 2 hours to firm up.
Store in a plastic bag or air tight container in the fridge for up to one week.
Double the recipe and freeze a batch in a plastic bag for up to 3 months (although I highly doubt they’ll last that long!).
I’m definitely going to try these ones, I always forget about Goji berries!
