I’m not much of a juice fan (which means my son isn’t either!) but whenever we are in Italy I always seem to crave it, maybe because EVERYTHING seems to taste better there!
One of my favourite juice flavours is “Ace”, which is a surprisingly delicious blend of orange, lemon, and carrots.
Yesterday, (with the weather warming up and all) I was reminiscing about our vacations in Italy and for some strange reason the thoughts led to juice! I (very conveniently) had some carrots in the fridge and had also just bought a few oranges. I swapped the lemon (which obviously would have been too tart for baby in this recipe) for a Honeycrisp apple just to add a little more sweetness in the mix.
Ingredients
(Yields about 1 cup)
1 medium apple (about 1 cup), any sweet variety, peeled and chopped into 2 inch pieces
1 small carrot (about 1 cup), peeled and chopped into 2 inch pieces
1 tsp. orange zest
juice of fresh orange (or sugar-free orange juice), quantity as desired
pinch of cinnamon
Peel and core apple, peel carrot then chop both into 2-3 inch thick pieces (the size does not need to be exact-as long as they are small enough to fit into a small food processor).
Purée apple and carrot until well combined and smooth.
Add orange zest (making sure NOT to grate the white pith of the peel which is very bitter!), cinnamon then add orange juice (1 tbsp. at a time) puréeing until you get the desired consistency.
It’s a simple as that!
Serve alone or with a dollop of Greek yogurt.

Ooh, this looks like something my little one would love! He’d probably make a huge mess of himself, but I bet he’d eat every last little bit.

He would not eat it…me either actually! lol I think if the carrot were cooked slightly and then cooled, it would make for a better consistency. I am going to try it! Will let you know! 😉 As always, thanks for your recipes and blog…I love all the ideas!!!!!
