Clean Eating English Breakfast

Sometimes you just gotta have breakfast for dinner! It’s easy to prepare, and makes for a quick last minute meal on a busy weeknight, or any night for that matter. Contrary to its traditional counterpart, this clean eating English breakfast plate is healthier and lighter, but just as tasty and satiating!

I lived in England for two years over 15 years ago, and I still remember the quintessential English breakfast; fried mushrooms and tomatoes, eggs, canned beans, and sausage links or bacon, give or take an ingredient two depending on individual taste preferences. It was inevitable that I fell in love with the English breakfast while living in England. When in Rome you do as the Romans do, and when in London at 22 years old you party until the wee hours, and then concede yourself a full-on hangover cure for breakfast. An English breakfast is satisfying, but on the other hand, it’s also not easily digested. I mean, there’s a lot going on in one plate!

For me personally, starting the day off on a ridiculously full stomach was not my cup of tea. Instead, I often reserved this traditional English breakfast for dinner. Fast forward 17 years and I still crave those hearty breakfasts. By the same token, my taste buds and my diet have changed significantly over the course of 17 years, but that doesn’t mean I can’t enjoy a new and improved variation of a full English breakfast – case in point, this healthy breakfast idea!

This easy-peasy recipe (as the Brits would say) is full of flavour – but it won’t stretch your waistline. Not to mention, it lends well to a clean eating, vegetarian diet. I whipped up this clean breakfast with a few random ingredients – avocado, spinach, eggs, cherry tomatoes, mushrooms, and a splash of Sriracha however, you can personalize the recipe to include any other healthy add-ins, such as black beans, kale, vegan or turkey sausage.

Ingredients
    1 cup mushrooms of choice, thinly sliced
  • 3 cups organic spinach leaves, rinsed and patted dry
  • 1/2 cup cherry tomatoes, halved
  • 2 large organic eggs, prepared as desired
  • 1/2 ripe avocado, pitted and thinly sliced
  • Sriracha, quantity as desired (optional)
  • sea salt and black pepper to taste
  • 1-2 tbs. extra virgin olive oil
Directions

Heat 1-2 tablespoons of olive oil on medium heat in a medium frying pan for 1-2 minutes. Add the sliced mushrooms and sauté for about 5 minutes. Add the cherry tomatoes and continue to cook for another 2-3 minutes. Add the spinach (1-2 cups at a time) and cook, covered with a lid until withered. Season with sea salt and black pepper.

Transfer the veggies to a plate, then cook the eggs separately in the pan, as desired. Serve the eggs and veggies garnished with fresh avocado slices, scallions, fresh dill or parsley, and a splash of Sriracha, if desired.

    This looks so good!! I can’t believe this is actually pretty good for you, it looks too good! 😉 I need to try making this. My goal for 2017 is to try to eat breakfast more – I usually skip it, oops! Thanks for sharing!

    Oh yum. I love this kind of breakfast… well any type of breakfast actually. Lol. I do love me some nice apple chicken sausage. Great when eating clean.

  • Those eggs look delish and it’s great to eat food that gives us the nutrients we need. I had no idea what a typical English breakfast consisted of…let’s just say I’d blend right in! lol!

  • One of my big goals for the new year is clean eating! I love eggs and bacon, and sausage too! I like your suggestion of avocado in this dish. I like to usually make eggs, spinach, potatoes, and bacon.

    • Those four together are heavenly! I like the avocado in this dish because it adds the ‘fat’ since there is no bacon.

  • Anything with spinach in it is something I would love. It is my favorite food. I haven’t had eggs in a while. Maybe I will soon.
