If you follow this Blog, then you’ll know I’m a fan of energy bars! I’ve posted quite a few on here already…
Lemon Coconut
Chocolate Almond Butter
Apricot Honey
Cinnamon Pecan
Hazelnut Chocolate Goji Berry
And now, ONE more to add to this list! (Why not?!)
Although I usually prefer chocolate in its purest form (ALONE), I’ve been slowly acquiring a taste for more variety. We all know orange agrees with chocolate and since I had a few oranges in the fridge, I thought it would be a nice change to try this flavour combo.
And to switch it up again, why not make two-bite versions instead of a large bar? They are much more kid-friendly and the perfect finger food for a school (or after school) snack!
Ingredients
(Yields 8-9 medium balls)
1 cup Medjool dates
1/2 cup raw almonds
1/4 cup almond butter
2 tbs. raw honey
1/4 cup chocolate chips, melted
zest of 1 large orange
1/8 tsp. salt
Heat chocolate chips in a small bowl in the microwave for about 20 seconds (stirring after heated) then in 5-10 second intervals until melted.
In a small food processor, combine the dates and almonds until finely ground.
Note: The consistency of the dates and almonds will depend on your food processor. (Mine prefers keeping the mix chunky!)
Add the remaining ingredients and mix again until combined.
The mixture should be crumbly but wet enough to come together to form the balls.
Take a heaping tablespoon of the mixture and place in your hand. Roll around in the palm of your hand to form a ball.
*You need to move quickly as the heat from your hands will soften the mixture, making it harder (and messier) to shape the balls!
Leave in the fridge for at least 2 hours to firm up before serving.
These are best eaten right out of the fridge. The longer they sit the softer they get!
These are also freezer-friendly and keep well for up to 6 months (although, fresh is best!). Store in a re-sealable zip-lock bag for quick and easy access! 😉
Chewy, crumbly, and sweet with a hint of orange and honey! Yum!
I’m a huge fan of energy treats as well! I made a quinoa variation this past weekend and tried to play it off like it was a cookie, my husband was not impressed! I should have added chocolate chips, then he would have eaten it!
That’s hilarious! My husband knows better…whenever I prepare something new he always asks what’s in it! Mind you, I’ve successfully tricked him into eating foods he hates, like cauliflower!!
Lisa, that sounds like my husband! lol Are we married to the same man??
I’d loveeeee to hear your trick on getting your picky eater eat “new” food.
Sounds like it, lol! All I know is, if my husband will eat it (i.e., I trick him into eating it) then the kids will too 😉
That’s the trick! Gotcha! So using husband as a role model for kids! I can see why it’s win-win-win! I love that trick! 🙂
Works every time!
