Our adventure in Sardinia has begun. While we’re used to life during the summers in this tourist destination, living here year-round is another story. School started this week (about two weeks later than at home in Canada) and needless to say, my kids were more than ready to get back to routine, even if their ‘routine’ was a new one. I was certain that they would feel at home and fit in instantly, since they had spent a few days a week for the last two months at summer school. In fact, just as I had imagined, their first day went off without a hitch. End of summer usually also means back to work for me as an elementary school teacher, but not this year. I’ve taken a hiatus from my ‘9 to 5’ teaching job to move here and focus on the passions that feed my soul, like teaching yoga and cooking!

This summer was such a lazy one, in terms of cooking and recipe developing. Scorching hot temperatures resulted in the oven being practically off limits all summer, and not to mention extremely low blood pressure prevented me from having the energy to do just about anything, let alone cook! No excuses now. The kids are back in school and I cannot wait to get back into the kitchen to invent recipes, especially healthy snacks. One thing I noticed about snack time here in Italy is that they are always packaged treats loaded with sugar – mini cakes, croissants, cookies, the sugary choices are endless. Now that I have the time and energy to get back in the kitchen, I’m making it a point to prepare wholesome, portable snacks that the kids can bring to school, like these delicious oatmeal raisin cookies. My kids might be going to an Italian school and adapting to the Italian ways, but they’ll always be little Canadians at heart – ones who love mom’s homemade cookies!

Ingredients
    1 large organic egg at room temperature
  • 1/2 cup extra virgin coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup raw honey
  • 1/s tsp. vanilla bean powder of 1 tbs. pure vanilla
  • 1 1/4 cup all-purpose flour
  • 1 1/4 cup quick oats
  • 1/2 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1/2 cup mini dark raisins
  • 1/4 tsp. sea salt
Directions

Preheat the oven to 350 degrees. Combine the wet ingredients with a hand mixer until smooth and creamy. Add the dry ingredients and continue to mix with the paddle attachment, or with a large wooden spoon. Dollop a heaping tablespoon of the batter onto a large baking sheet lined with parchment paper, placing the cookies about 2 inches apart.

Bake for 10-12 minutes, or until the outer edge of the cookie firms up and is lightly browned. The center will still be pale and soft but the cookies will firm up as they cool. Do not remove them from the baking tray until they have cooled completely. Store in an airtight container for one week or in the fridge for 3 months.

    Oh my, they really do look the best. The perfect balance between crunch and chewy! I’ve got a bag of raisins on the counter and I am so up for making some of these today. I’d have to substitute for gluten-free flour, but I think it’ll come out good! Thanks for sharing!!

  • I don’t eat enough oatmeal raisin cookies. I used to make them all of the time! Now that the weather is cooling down a bit, I might have to start making them again – warm the house and make it smell like cookies inside!

    I grew up loving oatmeal cookies but never attempted to make em’. Hopefully my girls will love since they do eat granola, this should be healthier and homemade.
    Good things back to school went smoothly. My youngest finally stopped crying during school drop off so that’s huge for me.

    Oatmeal raisin are one of my favorites. It rivals my absolute favorite: chocolate chip cookies. I like oatmeal raisin cookies with lots of raisins, so I usually add more in my recipe than typical recipes call for.

  • These remind me of my grandma. She made oatmeal raisin cookies and I swear, they tasted like they’d dropped out of oatmeal heaven. I made them once as a gift but was so tempted that I ate them and bought a gift. (Shame on me). She always pre-soaked her raisins in a cup of very hot water, although I warm some ginger brandy instead. Also, she always ground them up ahead of time, that way you got more raisin in each bite. Truly the most incredible cookie known to man! x

    • ‘Dropped out of oatmeal heaven!’ lol! I’ve soaked raisins before for other recipes, but never for these…that’s a good idea! And I will definitely try grinding them…pretty brilliant idea!
