Raw Coconut Chocolate Balls

Treat the family on Valentine’s Day with this healthy raw treat!


These raw ‘timbits’ got their name because of their similarity in taste and texture to the real thing-dense and cakey like timbits but also crumbly and chewy at the same time. Let’s just say that they have almost every taste sensation all in one tiny two-bite (or one-bite!) morsel.


I’m a fan of energy bars, homemade that is, and always have a huge stash in the freezer. (If you’re not familiar with my energy bar recipes, try THIS one!). These timbits were initially destined to become, yet another, energy bar, packed with my ‘traditional’ ingredient list-dates, almonds, almond butter, etc.

Well, luck would have it that I happened to notice the bgd of almond flour sitting in the freezer (which had been sitting there for quite some time!), so I decided to switch up the recipe by adding almond flour instead of whole almonds, nixing the dates, and adding coconut flakes for flakiness and as a binder (and also because I LOVE coconut!).


Now, I’m sure there are many of you out there who haven’t jumped on the “raw” bandwagon just yet…but these are definitely worth a try! Firstly, they are super easy to make. Secondly, they are decadent AND healthier than the real thing, and thirdly…

If they have you scrounging for leftovers (like I mean, licking the tip of your finger and then patting the leftovers so they conveniently stick to your finger so as to get EVERY last morsel) then they HAVE to be a hit!


(Yields 10 timbits)
1 cup unsweetened shredded coconut
3/4 cup almond flour
1 tbs. extra-virgin coconut oil, solidified at room temperature
2 tbs. agave (or liquid sweetener of choice)
1-2 tbs. distilled water or sweetened milk of choice (I opted for water because I didn’t have any diary-free milk in the fridge!)
1 tbs. almond butter (or other nut butter)
1 teaspoon vanilla extract
1/4 cup raw cocoa powder plus 1 teaspoon
1/4 tsp. ground espresso (optional)
1/2 teaspoon ground cinnamon
1 tsp. ground flax (optional)
1/8 teaspoon sea salt

Place all ingredients in a small food processor.


Blend (with only 1 tbs. of water) for a minute or two or until combined. The mixture will still be a bit crumbly but should stick together to form a ball. If the mixture is too crumbly add another tablespoon of water or milk then blend again.


Set in the fridge to cool for about 30 minutes. Once cooled, remove from the fridge and shape the timbits. I used a heaping tablespoon for each and they were the perfect size (just like a timbit) but you can make them any size you prefer.


Form the balls by pressing the ‘dough’ together in the palm of your hand (to compact it) then roll into a ball. If desired, roll them in coconut flakes, more cocoa, or enjoy them as is!


Easy-peasy, right?! TRY not to eat them all at once and store them in the freezer (I eat them right out of the freezer) or in the fridge for 2-3 weeks…although I doubt they will EVER last that long!
