This morning when I woke up I could sense that it was going to be a lazy day. Morning snack was not looking promising-mixed yogurt and fruit, as per usual on lazy days.
A moment of inspiration was all I needed to transform what could have been a boring snack into a masterpiece-although I highly doubt my son noticed the difference!
The word ‘parfait’ can sound pretentious as it rolls off your tongue, but it is anything but pretentious. Parfait simply refers to the method of preparation-layering fruit with yogurt or ice cream. That’s it.
This end result is a much more elegant than mixing all of the ingredients together, since you can see the layers of colours and different textures.
This recipe calls for mango and banana, but you can combine any fruits you prefer, depending on what you have in the fridge.
This recipe makes about two portions, or more depending on how much your baby eats. I often make this for my son and then devour the leftover portion-although I’m sure he could probably polish off all of it himself!
