In reply to IMADETHISDISH. Thanks! I definitely think it would work....the batter is actually quite dense (mostly due to the gluten-free flour) so separating the batter into muffins might actually result in a less dense bread. If you try it, let me know ;-)

I’ve been looking for a good zucchini bread recipe for the longest time. Most zucchini bread recipes have tonnes of oil in it. You’ve solved my problem, Lisa! 😀 Do you think it would work baking them as individual muffins?
