Oh yeah, this recipe is a keeper for sure. Hubby really liked it too! Of course, he likes his bread, so, had some heal ends from ciabatta bread, cubed and toasted them in the oven drizzled with some EVOO and sprinkle of garlic powder. Perfect! Thank you Lisa

Will try it tonight, since hubby took ribs, leftover, to work for lunch today and we DO try to not eat meat every meal.
Don’t have fresh broccoli but a bag of florets ought to work just fine. This sorta reminds me of a Thai Green Curry recipe I have.
On another note, I could eat soup for dinner anytime of year.

I used fresh grated ginger along with the garlic, turmeric and coconut milk. I cooked the sweet potatoes for 10 mins or so before adding the broccoli florets as I like my broccoli to have some ‘bite’. I feared cooking for 20 to 25 mins would make the broccoli a bit mushy ! This is a keeper ! Thanks Lisa xx
