One I could barely mix. I followed the recipe as shown. Is the coconut oil supposed to be melted? I didn’t do that. What did I do wrong?? HELP.

Thanks so much for coming back to post some feedback! I’m glad your veggie hater approved these. The spinach is so mild that there is no way they can taste it! I’m not sure if they would be the same consistency with more spinach in them…you’d have to try and see how they turn out. Since it really isn’t that much more spinach I’m sure they would cook fine…but maybe they would be a bit denser?

They both loved it! No spinach taste whatsoever.
I wonder if putting three cups of spinach instead of two would make it difficult for the brownies to bake? Any thoughts? I made them in a 9×9 pan and had to bake them for about 32 minutes. Came out chewy and delicious. Thanks for the recipe!

Who would ever guess they had spinach in them? I have to make these soon.

Neither had I, lol! I’m sure your kids will love these as much as mine did!

Isn’t that true? I have no problem with trial and error…I think it makes you more confident and adventurous in the kitchen!

I actually had my kids help me make these the second time around…after they had devoured them the first time. They knew there was spinach in them and still ate them. Maybe they forgot?! lol!

Thank you! I always have a huge bag of spinach on hand. However, if I forget about it and it needs to be consumed, these brownies (and my spinach chickpea hummus) are always my go-to meals!

I don’t think it’s so much the fact of sneaking them in but more so the idea that if I can add a boost of nutrition to my family’s meals, then why not?!
