My mission to get my kids to eat more veggies has taken a turn, for the better. My kids have decided, since literally the first few days of January, that they would eat more veggies. No bribes. No hiding the veggies in their meals or smoothies. Just me, simply stating that I had had enough (throwing in that if they wanted to grow up strong and healthy they needed to eat more veggies). Perhaps, there was a just little pressure put on them on my part. Regardless, whatever I said, whatever I did, they agreed – and just in time for the New Year. A New Year’s Resolution, perhaps?
Lately their veggie of choice has been zucchini; tempura zucchini, zucchini sautéed with tomato sauce, cheesy baked zucchini crisps, zucchini with pasta, zucchini and eggs, and their favourite; zucchini pesto – which happened to be my inspiration for this recipe. Zucchini and pesto are one of my favourite flavour combinations, and this cold weather has me cooking up a ton of soups and stews, so way not combine the two in a healthy, rich and creamy (but not cream-based) soup? Wait, a creamy vegan soup? My secret ingredient? Potatoes! They add a ton of richness to any soup, but when you puree them they another depth of richness and creaminess. To add even more flavour (if you are not vegan), you can add in a big piece of Parmesan rind to the pot. Either way, you are going to love this healthy, green soup! The pesto is the quintessential ingredient in this recipe so I suggest you do not skimp on quality. Homemade basil pesto is best to ensure optimal flavour and freshness, but if you purchase jarred pesto just be sure to get top quality. The pesto can really make or break this recipe!

We love soup at home, especially potato-based ones, this will definitely be a favourite specially now that it has been colder than usual. I’ve only two ways to cook zucchini: for bibimbap and sauteed in herbed butter! Always hits the spot! 😉

Oh my gooooodness! This looks phenomenal, I would love to try this. All the ingredients sound good to me, the only thing I would add would be vegan parmesan cheese. I recently tried it for the first time when I made zucchini noodles with vegan alfredo and it was quite tasty. I love soups and I make large batches to save them for days when I don’t feel like cooking. This recipe is going in my cook book for sure!
I love potato in a soup because it fills you up without having to devour a loaf of bread, haha! Soup is one of those great chances to get some serious veg action in too, I rarely eat meat soups. I had kind of forgotten about zucchini and wonder what the texture would be like in a soup. I love the flavor but have never been the biggest fan of the squidgy texture zucchini has. I could do with a veg boost at the moment though so might have to give it a go!
If you don’t like the texture of zucchini you can even puree this soup!

I’m from Windsor, but have been living in Italy. The ONE thing I do NOT miss is the bitter cold! It is beautiful here right now…pushing 60-70 degrees by midday!!
Our teenage daughter has been vegan for a couple of years, so we are always on the look out for new healthy vegan meals to try. This looks fantastic. I’ll have to give it a try.
