Never know what to do with that lone piece of leftover salmon in the fridge? Here’s a recipe to try!
I personally love ‘lone leftovers’ (as I call them) because they force inspire me to create new (usually interesting) recipes. All you need is a bit of imagination and of course, a few random items in the fridge or pantry (which by the way should always be well-stocked. Read more about my personal pantry list HERE.)
The ‘holy trinity’ for me when it comes to salmon is dill, mayo and lemon (and sometimes I swap all three for olive tapenade…yum!). The tart dill and lemon and creamy mayo make the perfect flavour combination.
My son LOVED this wrap! (I also think the tortilla had something to do with it…what is it with kids and tortillas?!)
Ingredients
1 large tortilla
3/4 cup – 1 cup cooked salmon, mashed or flaked with a fork
1 tsp. fresh dill, finely chopped
2 tbs. light mayonnaise
1 tsp. fresh lemon juice
zest of 1/2 lemon
Mix the salmon, dill, lemon and mayo in a small bowl until combined.
Spread evenly onto the tortilla, leaving about a 1 1/2 inch border around the outside of the tortilla.
Fold the sides inward (about 2 inches wide) then roll from one side (the open-faced side closest to you works best), holding the sides closed until the wrap is sealed. Flatten slightly with the palm of your hand.
Cut the tortilla in half , diagonally down the middle (if you want to be somewhat artistic-that’s the most decorative I get!)
Serve at room temperature or slightly warmed.
This is similar to a wrap I order from the cafe down the street from my house-never thought to make it myself! My daughter would totally love this too. 🙂
I also love adding some fresh spinach…but my son won’t have it, lol! You should make it yourself…I’m sure it’s much cheaper to make than to buy at the cafe 😉
