Two of my family’s favourite ingredients are combined in this simple, easy to make recipe that packs a ton of flavour! These roasted pesto potatoes are a delicious side dish to serve the family or a great surprise to serve dinner guests, rather than traditional (boring!) roasted potatoes.

Roasted potatoes go hand in hand with a dipping accompaniment, which usually means sugary ketchup or cream based dips. Since my son is a huge fan of roasted potatoes (most often doused with ketchup) I decided to try offering him a more flavourful twist on the traditional recipe.

Just imagine the most deliciously roasted potato….then imagine each deliciously roasted potato morsel slathered with creamy, earthy basil pesto and garnished with salty Parmesan cheese. The burst of flavour in each bite make these roasted pesto potatoes a delicious and unique alternative to tradtionally roasted ones.

Ingredients
    1 kg small roasting potatoes of choice
  • 2 tbs. extra virgin olive oil
  • 1 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1-2 tbs. basil pesto
  • 1/4 cup grated Parmesan cheese
Directions

Preheat oven to 400 degress. Rinse the potatoes and pat dry then cut in half (or in quarters, depending on the size of the potatoes). They should be roughly 2 cm in diameter. Place on a large baking sheet lined with parchment paper. Season with olive oil, salt, and pepper and mix until the potatoes are fully coated. Bake in the oven for 25-30 minutes, or until fork tender.

Roasted Pesto Potatoes

Let sit on the baking sheet for about 5 minutes to cool slightly then transfer to a large mixing bowl. Add the pesto and mix gently (to avoid breaking apart the potatoes) with your hands or a large spoon. Garnish with freshly grated Parmesan cheese.
