The recipe for these muffins is simple-combine cooked quinoa with toppings of choice, such as pineapple and ham, pepperoni and mushrooms, cherry tomatoes and basil, or simply loaded with a variety of cheeses, and bake.

Ingredients
    2 cups cooked quinoa (about 3/4 cup uncooked), slightly cooled
  • 2 medium organic eggs
  • 3/4 cup - 1 cup pizza toppings of choice, roughly chopped
  • 1 1/2 cups shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup marinara sauce
  • 1 tsp. dried oregano
  • 1 tsp. sea salt
  • 1/4 tsp. black pepper
  • Marinara sauce for dipping, quantity as desired
Directions

Preheat oven to 350 degrees. Line a 12-cup regular muffin tin with muffin liners and coat generously with nonstick cooking spray. Mix all the ingredients in a large bowl until combined. The mixture will be somewhat wet but should come together easily. Scoop the mixture into the muffin tins, filling them until about 3/4 full.

Quinoa Pizza Muffins

Cook for 15-20 minutes or until firm and a toothpick inserted comes out clean. Set aside to cool for a few minutes before removing from the muffin tin. Serve with warm with marinara dipping sauce.

Store in an air tight container in the fridge for 2-3 days or in the freezer for up to 3 months.
