Switch up pizza night with these scrumptious quinoa pizza muffins. These protein-packed morsels, perfect for little hands to grab, are stuffed with mozzarella cheese, Parmesan, prosciutto, green olives, and marinara sauce…and taste just like pizza!
This easy to make, fun finger food can be served to babies (10+ months) and toddlers, or as an interesting, gluten-free appetizer at your next dinner party.
The recipe for these muffins is simple-combine cooked quinoa with toppings of choice, such as pineapple and ham, pepperoni and mushrooms, cherry tomatoes and basil, or simply loaded with a variety of cheeses, and bake.
Not only do my kids love the taste of these, they enjoy making them with me. I’m all for giving children the opportunity to get in the kitchen and get their hands dirty. It helps develop fine and gross motor skills, as well as encourage creativity and ownership. The likelihood that children will eat new foods usually increases when they help prepare them.
Simple and flavourful recipes such as this one, are my favourites to make, since I get to prepare dinner and spend quality time with the kids at the same time!

Pizza muffins sound delicious and the fact that it’s healthy makes it that much better. I’m tempted to try it but I’m hesitant since anything pizza related usually gives me heartburn.
Maybe it depends on the type of pizza you are eating! It could be the cheese, gluten or possibly the sauce, since tomatoes are acidic. Quinoa is gluten-free and there is very little tomato sauce in this recipe. You could also omit the cheese or use soy cheese as a substitute!

These look delicious and my kids would love them!! I love having kids in the kitchen and completely agree that they are more likely to try things they are involved in making.
It’s a bit more stressful at times (especially if you’re making something messy!) but worth it! I love how my two year old opens the fridge by herself and grabs whatever I need on her own 😉

It’s a great way to use up leftover quinoa! I usually make a huge batch on Sunday and store it in the fridge for the week. Sometimes, when I only have a cup or two lefotver, I’ll make these!

Thanks…they hold together pretty well actually (if they are slightly warm). If you eat them piping hot the cheese is too stringy to hold them together but still they don’t completely fall apart!!
