These peanut butter chocolate oat balls are scrumptious little morsels packed with a ton of flavour, creamy peanut butter, sweet honey, fiber-rich oats, and decadent chocolate chips.

Most of our summer vacations are spent lazing around the beach with the kids. Although this sounds like pure bliss (in theory), it can often be tiring, especially with two little ones to keep up after.

It also involves a ton of organization and preparation on my part when it comes to preparing and packing beach-friendly, on-the-go snacks for myself and the kids. My kids love fresh fruit and yogurt, and since both are so easy to pack up they are usually my go-to portable snack for when we’re on-the-go.

This morning however, I was inspired to switch up snack-time just a bit and surprised them with these delicious, raw treats. The combination of bittersweet chocolate chips, sweet honey, and salty peanut butter makes for an explosion of flavour, in just one two-bite morsel.

Ingredients
    3/4 cup raw peanut butter (or nut butter of choice)
  • 2 tbs. raw organic honey
  • 1 cup regular old-fashioned oats (or gluten-free)
  • 1/4 cup dark chocolate chips (melted, if desired)
  • 1/8 tsp. cinnamon (optional)
  • 1/8 tsp. sea salt (optional)
Directions

If melting the chocolate chips, add to a small bowl and heat in a microwave in 15-20 second increments to avoid overheating and burning the chips. Set aside for a minute or two to cool before adding to the mixture.

Mix the honey and peanut butter with a large spoon until well combined.

Once combined, add the remaining ingredients and mix until thoroughly combined. Allow the mixture to cool in the fridge for at least 1-2 hours.

Remove from the fridge then scoop out about 1 tbs. of the mixture and shape into balls. Coat your hands lightly with butter, coconut oil, or water to prevent the mixture from sticking to them.

*If the mixture is too dry and doesn’t hold together well add about 1 teaspoon at a time of cold water. On the contrary, if the mixture is too sticky add more oats (about 1 tbs. at a time) until you get the ideal consistency.

Refrigerate the balls on a baking sheet for at least 4 hours. Store in an air-tight container or zip-lock bag in the fridge for up to 2 weeks or in the freezer for up to 3 months.
