Everybody loves the rich and nutty flavour of Nutella. My kids definitely share my love for it! This Nutella banana pudding is a decadent albeit nutritious treat that I can feel good about feeding the kids since it’s loaded with potassium-rich bananas and healthy fats from the creamy avocados.
This recipe is foolproof and cannot be an easier to prepare. It requires only 3 ingredients to prepare, with a few add-ins, if desired. All you need is a ripe banana and equally ripe avocado and a dollop of Nutella. Although it is optional, the addition of extra virgin coconut oil lends a buttery richness to this pudding and not to mention another healthy dose of heart-healthy omega 3-fatty acids.
The degree of sweetness of this pudding will depend solely on the ripeness of the banana you use. In fact, the riper, the better. If the banana is super-sweet you can omit the additional maple syrup, although it does add a delicious depth of flavour. If you don’t care much for maple syrup simply substitute it with raw honey, or organic brown rice syrup.
I tend to make this pudding very often since I always have ripe bananas and avocado on hand. It literally takes minutes to make and the kids devour it. Don’t have any Nutella in the pantry? Alternative nut butters such as almond and peanut butter tastes just as good and add the same nutty flavour and creamy consistency as the Nutella.
