Nutella Banana Pudding

Everybody loves the rich and nutty flavour of Nutella. My kids definitely share my love for it! This Nutella banana pudding is a decadent albeit nutritious treat that I can feel good about feeding the kids since it’s loaded with potassium-rich bananas and healthy fats from the creamy avocados.

Vegan Nutella Banana Pudding

This recipe is foolproof and cannot be an easier to prepare. It requires only 3 ingredients to prepare, with a few add-ins, if desired. All you need is a ripe banana and equally ripe avocado and a dollop of Nutella. Although it is optional, the addition of extra virgin coconut oil lends a buttery richness to this pudding and not to mention another healthy dose of heart-healthy omega 3-fatty acids.

The degree of sweetness of this pudding will depend solely on the ripeness of the banana you use. In fact, the riper, the better. If the banana is super-sweet you can omit the additional maple syrup, although it does add a delicious depth of flavour. If you don’t care much for maple syrup simply substitute it with raw honey, or organic brown rice syrup.

I tend to make this pudding very often since I always have ripe bananas and avocado on hand. It literally takes minutes to make and the kids devour it. Don’t have any Nutella in the pantry? Alternative nut butters such as almond and peanut butter tastes just as good and add the same nutty flavour and creamy consistency as the Nutella.

Ingredients
    1/2 ripe Hass avocado
  • 1/2 large, ripe banana
  • 1 heaping tbs. Nutella
  • 1 tbs. raw honey or maple syrup
  • 1 tbs. extra-virgin coconut oil, at room temperature (optional)
Directions

Halve the avocado and score one half into cubes with a knife.

Scoop out the avocado directly into a small food processor.

Slice the banana into 1-2 inch pieces then add to the processor with the Nutella and coconut oil.

Vegan Nutella Banana Pudding

Blend for about 1 minute or until the ingredients are combined and smooth and creamy. If you prefer a less dense consistency, add one tablespoon of plant-based milk and blend again to combine.

Vegan Nutella Banana Pudding

This is best served chilled but is just as delicious served at room temperature. Garnish with fresh bananas and another dollop of Nutella. Serve within one day of preparation.

    Confession: I’ve never tried Nutella! I hear it’s amazing, but I would have never thought to use avacados to make pudding! I think that’s something I may have to try out here in the near future. I wonder if you could sub out the banana for something else though because I’m not a big fan…

    This is such an interesting spin on pudding. If my boys were smaller they would probably eat this up because they love the consistency and the avocado for sure! Will definitely try!

    This is perfect! I have started going to the gym, and keep getting this banana peanut butter chocolate smoothie. It has a lot of powders, a tiny bit of banana, and almond milk. I love that this seems like it will taste similar, but has natural ingredients! We always have bananas and avocados around here!

    I love banana pudding, but I think I might be the only person in the world who has never tried Nutella! The addition of the avocado seems a bit strange to me but I would be willing to try it. It sounds (and looks) very intriguing!

    And I thought I had successfully talked myself out of Nutella. Now I’ve gotta go buy a jar just so I can try this oh-so-healthy recipe! It’s Vegan, so of course it’s healthy, right????

    • Lol!! I’ve tried that in the past…it didn’t work! The thing I hate about Nutella is that it’s so pricey and it literally lasts less than a week in my house!
