Carrot cake is delicious, but also full of sugar, dairy, gluten and other unhealthy ingredients. I’ve had a long-time love affair with carrot cake however, I rarely eat it due to various food intolerances. I was craving some the other day and so I decided to make a raw carrot cake-inspired treat to satisy my craving!

These raw carrot cake balls are loosely adapted from my other raw recipes, such as Raw Chocolate Orange Almond Bites and Raw Coconut Chocolate Balls and contain many of the same ingredients, such as fresh Medjool dates, coconut, nuts and natural sweeteners.

Not only do these scrumptious morsels have the flavour of carrot cake, they actually have carrots in them! Since carrots tend to retain some water these balls have a chewier texture, which makes them an ideal treat for little ones. They are also super easy for little hands to hold onto and munch on!

Ingredients
    5-6 extra-large Medjool dates (about 1/2 cup), pitted
  • 1 cup carrots, peeled and finely grated
  • 1/2 cup almond flour
  • 1/2 cup pecans, finely chopped
  • 1 tbs. ground flax
  • 1 tsp. pure vanilla extract
  • 1/2 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1/4 cup golden raisins (optional)
  • 1/2 cup - 3/4 cup quick oats
  • 1-2 tbs. plant-based milk or cold water
Directions

Combine all of the ingredients (except for the raisins and milk) in a large food processor and pulse until just combined. Add 1-2 tbs. of milk if needed then blend again. The mixture should be somewhat crumbly and moist, but should still hold its shape when pressed together. You might have to play with some of the ingredient quantities depending on your preference (i.e., if you prefer a drier, crunchier texture, add more almond flour or oats, or add more dates if you prefer a chewier texture).

Remove the mixture from the food processor and stir in the raisins. Add a drop or two of cold water to coat your palms then dollop a heaping tablespoon of the mixture into your palm and roll into a ball. Once prepared, store these in the fridge in an air tight container for 2-3 weeks or in the freezer for up to 3 months.
