This Indian lentil soup puree is an easy to prepare, protein-rich first food for baby. It lends well to vegan and vegetarian diets, and can be prepared for the entire family. Just set aside a portion for baby, puree, and voila! Lunch is served.

Lentils are one of those culinary blank canvases. They are delicious with just about every other ingredient and give a creamy, rich texture to any meal. Served cold or hot, lentils are a versatile meatless Monday meal that the whole family can enjoy. They freeze extremely well so they lend well to big batch preparation.

Ingredients
    1 cup dried brown lentils
  • 5 cups cold water
  • 2 tbs. extra-virgin olive oil
  • 2 cloves garlic, whole
  • 1/2 small onion, finely chopped
  • 1/2 celery stalk, finely chopped
  • 1 small carrot, finely chopped
  • 1 tsp. each cumin, ground coriander, and mild curry powder
  • 1/2 tsp. turmeric
  • pinch of cinnamon
  • salt and pepper to taste
Directions

Heat the oil in a large saucepan on medium heat for 1 minute. Add the garlic and onions and sauté for about 5 minutes or until translucent. Add the celery and carrot and continue to cook for 5-7 minutes, stirring occasionally, until softened.

Add the lentils and the spices to the saucepan and toast for about 2 minutes. Add the water, bring to a boil then reduce the heat to medium and cook for another 30 minutes, or until lentils are softened. (If you prefer a denser soup add only 4 cups of water and then more water if needed, or vice versa). Once the lentils are cooked puree with an immersion blender of food processor. Store in baby cubes in the freezer for up to 3 months.
