No fruit represents seasonal summer produce better than fresh peaches. Succulent, sweet, bursting with flavour, delicious picked right from the tree – and even more delicious when roasted to caramelized perfection. These honey and mint roasted peaches are divine, naturally sweetened with raw honey and complimented with fresh, earthy mint leaves.
I love adding variety to my kids’ snacks by mixing fruit with different herbs and spices. Both of my children love fruit so I try to offer as many different fruits as possible in a variety of different ways. Lately, we’ve been eating a ton of peaches. We’re spending our summer in Italy and my in-laws property is covered with a variety of fruit trees, and not to mention a plentiful garden full of herbs.
I’ve prepared peaches in every way possible – grated, grilled, combined in a parfait with Greek yogurt and cinnamon, peaches over a bed of fresh ricotta, garnished with local honey, smoothies, the list goes on and on. These honey and mint roasted peaches are by far one of my favourite ways to prepare them. Roasting already naturally sweet peaches brings out another depth of flavour that you just can’t get by eating them raw. If you take a peak in the oven while these are baking you can literally see all that caramelized goodness just oozing from the peaches. And I’m quite certain that you won’t be able to hold off on tasting a few before you remove them from the oven!
