Healthy Shamrock Smoothie

Happy St.Patrick’s Day! Have I got a healthy, vegan, green treat for you!

This healthy shamrock smoothie is a delicious combination of creamy avocado, organic spinach, and sweet bananas, blended with dairy-free coconut milk and natural sweeteners. A nutritious, easy-to-make treat for yourself and the kids.

With its mild, sweet flavour, spinach is the perfect leafy green to add to this smoothie, especially if you are preparing this for a skeptical toddler. The combination of avocado and coconut milk adds a luscious, creamy consistency which makes this smoothie a much healthier yet still satisying option for the kids.

Curious about turmeric? This bright yellow spice, traditionally used in curry, is well-know for its anti-inflammatory properties and is linked to improved brain function. As for the addition of turmeric in this recipe, I love the earthy flavour it adds to the smoothie and in my opinion, it pairs extremely well with sweet bananas.

If you have a picky toddler in the house who mostly avoids eating anything green, this smoothie just might do the trick. Although my son doesn’t love greens, he was willing to try this, most likely because he saw some of his favourite fruits go in the mix.

This healthy shamrock smoothie, which by the way I had prepared for myself (under the assumption that my son wouldn’t be interested in trying it) ended up being handed over to him! My son devoured this smoothie, despite the fact that he knew there was spinach in it.

On a side note; if you have an exceptionally picky child this smoothie would be better prepared in a Vitamix, which would conceal the spinach completely. Using a food processor does the trick although it doesn’t blend the spinach leaves entirely. I actually find the flecks somewhat festive 😉

Ingredients
    1/2 ripe hass avocado
  • 1 large ripe banana, (fresh or frozen), chopped into quarters
  • 1 cup organic spinach
  • 1/2 cup - 1 cup unsweetened coconut milk (depending on desired consistency)
  • 1 tbs. raw honey or organic maple syrup
  • 1/4 tsp. cinnamon (optional)
  • 1/4 tsp. freshly grated turmeric, or 1/8 tsp. turmeric powder
  • 1 tbs. nut butter of choice (optional)
  • 1 tbs. toasted coconut flakes for garnish, if desired
  • 1/2 tsp. vanilla bean powder or pure vanilla
  • 1 tbs. vegan protein powder (optional)
Directions

Blend all ingredients in a large food processor until smooth and creamy. Add 1/2 cup of coconut milk to begin with, then add more if needed to attain the desired consistency. Adjust sweetened, if needed.

Garnish with toasted coconut flakes for added sweetness and crunch and serve immediately.

    I pinned that one to a breakfast board. I think it would be an awesome way to start the day. Funny too, that your son ended up drinking it. Children voluntarily eating/drinking spinach is sure to make moms everywhere smile. 😉

    • It really depends on your preference…I actually put very little milk when I make frozen smoothies so they almost have the same texture as ice cream 😉

    This looks good! My kids like spinach and kale. Although I don’t have a vitamix either, I bet I could blend it enough for them!

      We are just starting getting back into shakes…since winter is FINALLY over!!! You can use any milk-almond, soy, hemp, coconut…I’ve tried them ALL!

  • With the ingredients of avocado, spinach and bananas, it doesn’t look like it would taste good, but your pictures are amazing and as a mom anytime I can sneak some veggies in, its a good thing.
