For so many of us, winter has been far too long and cold this year – even for us here in Sardinia. Case in point, we experienced the first major snowfall on the island in over 30 years! Lucky for us the snow lasted only for a day here, and although the weather is unseasonably cool for the island, temperatures are rising and the sun is shining. Spring is on its way!

Farmers’ markets are on the verge of the new season, and soon we’ll be savouring all kinds of fresh fruits and vegetables. Considering mother nature is still somewhat confused about temperatures, it still feels a little bit early to be preparing fresher, lighter dishes. This healthy salad is the perfect transition recipe from winter to spring. It’s loaded with versatile chickpeas (a vegan’s stick-to-your-ribs staple for winter), fresh crunchy rocket and has the perfect blend of nuttiness and bitter, fresh-tasting greens. The crumbled feta, dill, tangy olives, and easy to prepare lemon vinaigrette are reminiscent of traditional Greek flavours. If you’re not a fan of chickpeas or arugula they can be substituted with lentils or your favourite legume and kale or other bitter leafy greens. This chickpea salad is great for a quick lunch, a pack n’ go picnic staple, and a simple and unique salad to serve to guests at a dinner party.

Ingredients
    2-3 cups arugula leaves
  • 1/2 - 3/4 cup cooked chickpeas
  • 1/2 tsp. dried dill
  • crumbled feta cheese, quantity as desired
  • 2 tbs. fresh lemon juice
  • 2-3 tbs. extra virgin olive oil
  • sea salt and black pepper to taste

    this sounds so perfect for dinners on warm summer days when you just want a light meal. I agree with another ready that arugula is underrated. I personally always forget about it! But, when I do have it, I am reminded that I love the bite to it!

    I love all the ingredients in this salad! Chickpea is perfect in it! And sometimes I add some tomatoes and tuna. So yummy!

    I totally agree that Mother Nature seems a bit confused about what season it should be! I’m anxiously waiting for spring and summer produce to hit the local farmer’s markets. This recipe does seem like the perfect combination of winter and spring, a great way to transition your menu. I love chickpeas. I bet the lemon with the feta really brings out the flavors!

    I cannot remember the last time I had a chickpea salad, honestly it has been forever. I have been wanting new salad recipes and inspirations because eating the same thing over and over gets boring. I love feta and cherry tomatoes, they go so well together.

  • I have been trying to incorporate more and more into our diet including Chickpeas. I have never really known how to cook or prepare those things and now I am learning that they are amazing on salads! This looks great. I love using Arugula in my salads too.

    I really wish we could get some spring in Kentucky. I have a hard time finding new salad recipes that i could get my husband to eat. This one i think i could sell him on. He loves chickpeas and feta. I wouldn’t have thought about adding the lemon.

    You had me at chickpeas! This recipe looks and sounds so delicious. I’m not a vegan or vegetarian but I can’t wait to try this. Would you recommend adding a little sweet to it like beets? I just love a beets/arugula/feta combo haha.

  • I love every single ingredient in this salad. Arugula is such an underrated salad green. I also love how dill and feta play together to add a distinct earthiness that should play well against the peppery taste of the arugula.
