Fall is officially here and that crisp, cool autumn air has me craving warm, hearty fare, in this case, a fresh batch of homemade fall harvest granola. This hearty granola is packed with super foods like rolled oats, chia seeds, raw honey, and dried fruit.

Granola is a blank canvas for a healthy, wholesome breakfast for the family. All you need to prepare it is a simple base of oats (I like to mix quick and rolled oats for the perfect combination of flaky and clustered texture), some oil or butter, and sweetener, such as honey or maple syrup.

I’m a fan of granola-regardless of the time of year, and its always a staple item in my pantry since it’s a healthy and quick go-to breakfast or snack for the family.

This fall harvest granola is full of warm and earthy autumn-inspired flavours, like pumpkin pie spice, pumpkin seeds, and nutty oats.

Don’t let the long ingredient list fool you. Homemade granola takes only a few minutes to prepare before popping it into the oven. And nothing beats the aroma of granola roasting in the oven!

When it comes to granola recipes, I always make a huge batch since it usually goes fast in my home. What’s more, it has a long shelf-life and can be served and eaten in a variety of ways-mix it with yogurt or fruit, add as a crunchy topping to pancakes or crepes, or simply eat by the spoonful!

Ingredients
    1 1/2 cups quick oats
  • 1 1/2 cups rolled oats
  • 1 1/4 cup raw honey (or maple syrup)
  • 1/4 cup extra virgin coconut oil, melted
  • 1 tbs. chia seeds
  • 1 tsp. pumpkin pie spice
  • 1/2 cup raw pumpkin seeds
  • 1/4 cup raw sunflower seeds
  • 1/3 cup dried cherries 
  • 1/4 tsp. sea salt
Directions

Preheat oven to 325 degrees. Heat the coconut oil and honey in the microwave for 1-2 minutes or until just melted. Mix the dry ingredients (except for the dried cherries) with the coconut oil and honey in a large mixing bowl until combined. Bake for 30-45 minutes stirring every 5 minutes or so, until lightly browned. Remove from the oven and mix in the dried cherries. Allow the granola to cool completely before storing. Store in a mason jar or an air tight container in the pantry for 2-3 weeks or in the freezer for up to 6 months.
