I have discovered yet another delicious way to incorporate avocados into your diet! Is there any recipe that avocados don’t lend well to? The pureed avocado in this dish lends such a creamy, rich texture-similar in consistency to dairy-based cream sauces. My inspiration for this recipe was an afterthought-the kids wanted pasta for lunch, and I was out of options for a condiment. As per usual, last-minute sauces are always reserved for aglio e olio, butter with Parmesan cheese, or tuna olive tapenade. But today, I was in the mood for something different. And just like that, the lone guacamole sitting on the counter served as inspiration for this dish. On a side note, fresh quality ingredients are a must for this recipe, otherwise it will lack in flavour. Choose a good quality extra virgin olive oil, fresh lemon, and a perfectly ripened avocado to achieve optimal flavour.
