An interesting twist on traditional chocolate chip cookies, these healthy vegan avocado chocolate chip cookies are made with creamy avocado, decadent chocolate chips, and natural, healthy ingredients.
With its mild, slightly sweet flavour, avocado is an ideal green to add to baked goods. It literally goes undetected in these cookies, unless you roughly mash them as I do-I find the little green specks somewhat pretty! Besides the creamy texture the avocado gives to these cookies, it’s undoubtably healthy; packed with heart-healthy fats, protein, potassium, and dietary fiber.
We love avocados in this household, but more often than not that leftover, ripened halve sitting the fridge gets thrown out! With this recipe now under my belt, there are no more excuses for wasting leftover avocado…looks like I’ll be making these cookies often!
Cookies don’t necessarily have to equate to unhealthy. I make cookies all the time for the kids, but little do they know that I usually substitute traditional ingredients with healthier, vegan options, such as avocado for saturated fat and flax seed for eggs. What they do know is that they are always scrumptious, just as any cookie should be!
These particular cookies have a spongey, cake-like texture, puffing up in the oven just like little meringues; light and airy with a delicate crunch on the outside. They’re definitely worth a try!
