Things have been pretty quiet in the kitchen lately. Lucky for us
meals-on-wheels my mom has been delivering meals almost on a daily basis and if she’s not bringing something, she’s cooking at our house!
I somehow managed to whip up a batch of homemade Pumpkin Coconut Granola before going into the hospital for my c-section. It’s a good thing because my sons’ snacks have been pretty uneventful lately!
Parfaits are a perfect way to add variety to your child’s snacks and they’re fun to eat-I know my son loves discovering all the different layers. I especially love the combination of the tart apple, creamy yogurt and crunchy granola!
As for quantities, it really depends on how much you want to make and how much of each ingredient you prefer. Kill two birds with one stone and serve this to your baby and toddler. Serve immediately to your toddler (mine loves discovering the crunchy bits!) and for baby, simply let it sit until the yogurt and applesauce has soaked through the granola making it soft enough for baby to eat.
Homemade Pumpkin Coconut Granola
Homemade applesauce (or your favourite unsweetened organic variety)
Full-fat Greek yogurt (I love Oikos!)
The “instructions” are easy-peasy…simply dollop some yogurt into a bowl or cup, then top with applesauce and granola.
Continue to layer the yogurt, applesauce and granola until you have the perfect parfait!
It might even be too pretty to eat! 😉
*TIP: As delicious as it is with the yogurt, try it without too…tastes just like apple crumble pie!
