My week via Instagram-my take on Wordless Wednesday (well, with a few captions!). As per usual, I was busy in the kitchen whipping up some healthy food for the family! For daily updates from Bites for Babies visit our Instagram page!
Homemade Raw Blueberry Chia Jam
Toddler lunch; a delicious antipasto plate with cherry tomato salad, sliced prosciutto, toasted pitas, green olives, fig loaf and cubed provolone cheese.
Simple and fresh; Ricotta rigatoni with lemon and basil
Ratatouille, made with onions, peppers, potatoes, zucchini, eggplant, and tomatoes.
An impromptu recipe; roasted cauliflower and portobello mushroom risotto.
Post lunch pick-me-up; double espresso with homemade two-bite chocolates!
What I’m eating for breakfast these days; espresso with rice cakes-this one with organic peanut butter and homemade blueberry chia jam…
And this one with sliced banana, organic peanut butter, and chia seeds.
My son’s Italian-inspired breakfast, Cappuccino (actually, frothed milk!) with cinnamon and a drizzle of raw honey with a brioche.
A vegan take on chili made with quinoa and cauliflower.
Switched up my usual energy bar recipe! These are made with sesame seeds, pepitas, flax seed, chia seeds, raw honey and peanut butter.
Roasted veggie risotto garnished with freshly grated Parmesan.
Healthy, homemade minestrone soup; perfect for a cold winter’s evening!

delicious! I think I am going to combine sliced banana, organic peanut butter,
and chia seeds for a snack.
You could also spread it on toast…even add some drizzled honey 😉

I guess I am going to have to follow you on Instagram. Looks like you have some really tasty eats! I love rice and popcorn cakes and always looking for some new ideas to spruce them up.
Me too, lol! I alternate between bananas and peanut butter (and chia seeds), Nutella, chia jam…and sometimes I add some goji berries and/or sunflower seeds!
Welp, now I’m hungry! What amazing dishes!

You’ve mentioned a lot of foods that I haven’t tried yet like the minestrone, quinoa, blueberry chia and Ratatouille. Ratatouille reminds me of the movie. Love that movie. Now I’ll go check for a recipe for that one and see what I need to buy. 🙂

I’m hooked on that jam! I usually eat rice cakes for breakfast with almond butter and sugar-free jam. I recently found out that the jam I use has gmos’ in it…that’s when I decided to start making my own 😉

I’d like to try cauliflower roasted. I hear it really is tasty good.
It is actually! I love cauliflower so I’ll eat it anyway it’s cooked however, roasted is delicious!! My kids will only eat it that way!
