I’ve nicknamed these treats “heaven in a bite” because that is exactly what they are. I found the original recipe on the blog “Chocolate Covered Katie.” Although her version was delicious, I thought I would tweak the original recipe a bit to see what I could come up with. I don’t want to toot my own horn but they are delicious-even my husband said that they ALMOST taste like Ferraro Rocher’s! (That’s enough validation for me!) It’s hard to believe that these sweet and decadent “bites” are actually healthy! I promise you that only one bite (or maybe two!) will curb your sugar craving. So kick up your feet, grab your favourite book, and nibble away guiltlessly!!

1/4 cup carob powder
1 tbsp ground flax seed + 3 tbsp. warm water
1/2 tsp. vanilla
pinch of salt
1/2 cup nuts (any kind-I used raw unsalted almonds)
1/2 cup unsweetened shredded coconut
1/2 cup dried fruit (I used golden raisins)
1/4 cup nut butter (I used almond butter)
1/4 cup agave nectar (or sweetener of your choice)

Put flax seed and water in a bowl and let sit for about 5 minutes until combined.

Place all ingredients in a food processor (If you have a small one like mine you’ll need to divide the recipe and whizz half at a time).

The mixture will be somewhat crumbly but should pack together easily-if it is still too dry add a sweetener of your choice 1 tbsp. at a time, whizzing again each time to check consistency.

(I set aside two bites for my husband and I to eat with our afternoon tea today.)

I placed the remaining mixture in a biscotti pan (you can use any shallow pan). Here comes the messy part: flatten the mixture out with your hand until it is compacted in the pan.

Messy yes, but on a positive note, you literally have dessert at the “tips of your fingers!” 😉

Let set in the fridge for at least two hours. Turn out onto a cutting board and cut into desired size. Store in the fridge or freezer.
