Whenever I “watch” what I eat, I actually stick to Mexican dishes since I feel like it’s healthier with salsas and guac! Thanks for the tips.
Makes perfect sense….as long as you’re not eating ‘Mexican’ food from Taco Bell and recipes like flaming cheese, lol!

I think i’d like to make the stuffed peppers. That’s a great variation for them. That might even get my husband interested in quinoa.
That would be a great substitute for rice and a great way to introduce quinoa, especially if he already loves stuffed peppers. If you’re big meat eaters, you could also add some sauteed ground beef mixed into the quinoa.

Everything on this list looks delicious. The Southern Quinoa Stuffed Peppers and the Cheeseburger Burrito Wraps are my favorites! We don’t celebrate Cinco de Mayo here but I’m definitely trying these dishes soon.
We don’t actually celebrate it either in my neck of the woods however, a lot of restaurants hype it up!
I’m all about foods that are healthy, but don’t look like it or taste like it. All of these recipes pass the test with flying colors! Yum!

That’s one of my faves! It has a very similar texture to meat (especially if you don’t grind the cauliflower completely).
