Vegans and non-vegans alike will enjoy this soup. It’s a cross between a broth-based and a cream-like soup, which in my opinion is the perfect consistency-not too watery, not too creamy. The canned coconut milk adds just the right amount of sweetness without altering the light, fresh taste of this soup.

The addition of herbs and spices not only render this soup delicious but also healthy. Turmeric has a peppery, warm and bitter flavour and is well known for its anti-inflammatory properties. Ginger has a pungent and spicy bite and aids in relieving gastro-intestinal issues, and garlic boasts bold flavour and as we know, meany medicinal properties.

Prepare a large batch and store in the fridge for up to 3 days in an air-tight containter or in the freezer for up to 3 months.

Ingredients
    2 garlic cloves, halved or finely minced
  • about 4 cups broccoli florets
  • 2 medium sweet potatoes, cut into 2 inch cubes
  • 2 tbs. extra virgin olive oil
  • 4 cups vegetable broth
  • 3 cups cold water
  • 1/2 tsp. ground turmeric
  • 1/2 tsp. ginger puree (or dried ginger)
  • 1/4 cup canned coconut milk
Directions

Heat olive oil in a large pot on medium-low heat for 1-2 minutes.
Add the garlic and ginger and saute for about 2 minutes. Add the vegetable broth and water and bring to a boil (covered) on high heat.
Once boiling, reduce the heat to medium, add the broccoli, sweet potato, spices and coconut milk and cook for 20-25 minutes or until the vegetables are fork tender.

TIP: If a thicker and creamier consistency is desired, remove a few cups of the soup and puree with an immersion blender then return to the pot.

Serve with a drizzle of extra-virgin olive oil and additional coconut milk. Garnish with lightly salted pepitas for added texture if desired.

    Trying to use up staples before going on vacation, sweet potatoes mainly. Will try it tonight, since hubby took ribs, leftover, to work for lunch today and we DO try to not eat meat every meal.
    Don’t have fresh broccoli but a bag of florets ought to work just fine. This sorta reminds me of a Thai Green Curry recipe I have.
    On another note, I could eat soup for dinner anytime of year.

        Oh yeah, this recipe is a keeper for sure. Hubby really liked it too! Of course, he likes his bread, so, had some heal ends from ciabatta bread, cubed and toasted them in the oven drizzled with some EVOO and sprinkle of garlic powder. Perfect! Thank you Lisa

    Just made this soup and it was fab ! I used fresh grated ginger along with the garlic, turmeric and coconut milk. I cooked the sweet potatoes for 10 mins or so before adding the broccoli florets as I like my broccoli to have some ‘bite’. I feared cooking for 20 to 25 mins would make the broccoli a bit mushy ! This is a keeper ! Thanks Lisa xx

  • This looks pretty simple to make. I would of never thought of mixing these two together, but I love me some sweet potatoes and the kids love eating broccoli would be a hit in this house.

    Vegetarian here…thanks for the easy baby recipe. We don’t eat meat (we love cheese though) and I like that this is actual pieces of sweet potato and broc, instead of all just mushed together.

  • This looks exactly like something I make for Berlin often! She pretty much only likes broccoli (as far as the green stuff goes), so it goes into every dish! 🙂

    This looks so tasty. I didn’t know that you can use sweet potato in a soup. I might try your recipe someday.

    • I actually prefer sweet potatoes to regular potatoes. I also find that when I defrost soup, sweet potatoes maintain their texture much better than regular potatoes.

    • A few people on this thread have commented that they’ve never had sweet potatoes before…they’re delicious! You should also try roasting them in the oven with a touch of nutmeg or cinnamon! Yum!

  • I’m not ( yet ) vegan, but I’m seriously considering working my way to be one either this year or next year. I’m curious about putting sweet potato and broccoli together. I can tell that this looks good and smells good – never fails with coconut milk.
