I love this make-ahead oar recipe because it is so versatile. I always start with the base ingredients (oats, milk and yogurt) and add a variety of toppings, such as fresh blueberries, raspberries, mango, bananas (the list goes on) to create interesting overnight oats flavour combinations. The combination of sweet strawberries, tart yogurt and coconut milk and crumbly cookies makes for a delicious, strawberry cheesecake-inspired recipe that is actually healthy for you! The addition of chia seeds adds a dose of heart-healthy fats and is the key ingredient in creating these luscious, dense oats.

Ingredients
    1 cup old fashioned oats
  • 2 tbs. chia seeds
  • 1 tsp. pure vanilla extract
  • 2 - 2 1/2 cups unsweetened coconut milk (or milk of choice)
  • 2 tbs. plain full-fat Greek yogurt
  • 2-3 tbs. pure maple syrup or liquid sweetener of choice
  • 1/4 tsp. cinnamon
  • 1 cup organic strawberries, stems removed and finely sliced or diced
  • 1/4 cup unsweetened coconut flakes (optional)
  • 4-6 sugar-free cookies (optional), crumbled
Directions

Mix all of the ingredients in a medium bowl until combined. The mixture will seem very runny but the oats will soak up all of the excess liquid overnight. In fact, you may need to add more milk before serving, depending on the desired consistency.

To serve, layer the crumble the cookies in a small bowl or mason jar then top with the overnight oats. Garnish with freshly sliced strawberries, if desired. If serving to baby, combine all of the ingredients and let sit for a few minutes to soften the cookies before serving.
