This wholesome, vegan roasted cauliflower quinoa bowl is the perfect one-bowl meal, made with protein-rich quinoa and a fresh and tangy avocado lime dressing. It’s light and fresh, yet surprisingly filling. A delicious vegan meal that non-vegans can enjoy as a main or a side dish.
I have a confession to make. I’m obsessed with cauliflower. It actually surprises me that I haven’t posted more cauliflower-inspired recipes on the Blog, considering I roast an entire head of cauliflower at least once a week. If you’ve never tasted roasted cauliflower, you’re missing out. Slowly roasting the cauliflower coaxes out all the natural sugars, resulting in sweet, caramelized, tender florets.
My other obsession? Quinoa. It should be a pantry staple in everyone’s kitchen. It has a rich, nutty flavour, is loaded with protein, and tastes delicious with just about everything. There is always a bag or two of quinoa stashed in my pantry. Albeit quinoa is easy to come by nowadays, the quality of it varies extensively. Since I consume it so often it’s important for me to choose the best quality brand, like GoGo Quinoa ™. The combination of the caramelized cauliflower and the nutty quinoa, dressed with a creamy and tangy avocado lime vinaigrette makes this clean eating recipe full of fresh, simple flavours, yet rich and satisfying too!
I have one more confession to make. Despite my best efforts, I couldn’t convince my kids to eat this. For starters, there’s green in it. Enough said. Secondly, they have yet to appreciate cauliflower as much as I do – no matter which way I prepare it. It’s all good. They’ll get there, and in the meantime, I’ll serve myself seconds!

I have eaten a lot of cauliflower lately, I just love it! I would like to try to make this recipe and share it with my family because they may start to like it if I serve it this way instead of the boring way I have been eating it.

I’m not a cauliflower person at all but my son in-law would love to give this recipe a try, he also cooks with quinoa and love cauliflower.
I’ve tried cooking with quinoa, and so far I haven’t mastered it. It always comes out try when I try to cook it. However, because it’s so healthy, I still try.

I am trying get to make a lifestyle change which includes giving up sugar, gluten and dairy. This recipe looks like it’d fit in. I have never tried quinoa so this will be the imitation recipe.

I love cauliflower! I don’t think I’ve ever had quinoa before (my daughter eats it, so I may have unknowingly had some). I would like to try this recipe. It looks easy to make and the combination of ingredients make it interesting.
