Italian Eggs and Peppers

Italian eggs and peppers is a classic, rustic dish that can be served for brunch or lunch with a fresh piece of crusty Italian bread. This healthy 3-ingredient meal is so effortless to prepare and is the kind of no-stress meal that should be on everyone’s recipe repertoire.

One of my favorite memories is of my nonna standing at the stove making her traditional Italian meals; one of which was fried eggs with sautéed onions and peppers. It was a quick and tasty meal that everyone in the family loved – and the fact that she made it with passion made it taste even better. I have prepared this dish too many times to even remember, and albeit it’s delicious, it will never be as delicious as how Nonna used to make it! In terms of preparation, there’s not much to this dish – just sauté the onions and peppers on low heat, coaxing out all the natural sugars, then add some fresh organic eggs to the frying pan. Top with some fresh parsley and serve on it’s own with crusty bread, or transform these eggs and peppers into a hearty breakfast burrito.

Another reason this recipe is a quick fix for busy meal times? It only requires 3 simple ingredients. On any given day you can find all three of these ingredients in my fridge, which makes these Italian eggs and peppers one of my favourite go-to’s. This trio of veggies and eggs has such a delicious flavour profile – which might be surprising considering they are such simple ingredients. To make this simple dish, you don’t actually need a recipe. Once you know the cooking technique you can go from there, experimenting with different pepper varieties or herbs and spices, if you wish.

Ingredients
    3 tbs. extra virgin olive oil
  • 1 large Vidalia onions, thinly sliced
  • 3 large red bell peppers, seeded and trims removed, thinly sliced
  • 4-6 large organic eggs
  • 2-3 tbs. fresh parsley (optional)
  • sea salt and pepper to taste
Directions

Heat olive oil in a medium frying pan on medium-low heat for 2-3 minutes. Add the sliced onions and peppers and cook (covered with a lid) for 12-15 minutes, stirring frequently. Cook until softened and fork tender then remove the lid. If desired, turn the heat to high and cook for another 2-3 minutes, stirring frequently, until the onions and peppers are caramelized.

For the eggs, either transfer the onions and peppers to a plate then add the eggs to the pan and cook according to preference, adding more oil if needed. Another option is to move the onions and peppers to the outside of the pan, cracking the egg directly into the middle of the pan and frying.

  • This is very colorful, however I never been a fan of my eggs like that. However I always make scrambled eggs and peppers all the time, it’s so freaking good like that or even an omelette.

  • This is different, Never heard of Italian eggs. This dish is definitely healthy and offers great macronutrients. You’ve got your protein, veggies, lots of vitamins and minerals all in one plate.

  • Wow, this looks and sounds delicious. My family loves cooking with fresh peppers. We’re also very big about breakfast. I have never, ever thought to combine the two foods. I’ll have to give this a try.
