Healthy Chocolate Chip Mini Muffins

These healthy chocolate chip mini muffins will satisfy your chocolate cravings, without all the fat and calories. Preparing homemade muffins means you can make wholesome ingredient substitutions like coconut oil, Greek yogurt, and raw honey, which make these tasty muffins an ideal healthified version of their packaged counterparts.

We are huge muffin fans in my home, savoury or sweet, decadent or uber healthy, they always find their way into my recipe repertoire. Having said that, most of my recipes are reserved for experimentation, whether I’m substituting eggs with chia or flax seeds, or gluten-free flour blends. As with any experiment, the results sometimes vary in terms of texture and consistency, and although myself and my kids have accepted these fundamental differences, my husband is actually the one who has a hard time adjusting his (picky) palate to new flavours and textures. In an effort to appease his finickiness I created the closest recipe to the original that I could, albeit I couldn’t help but do some tweaking, replacing some of the all-purpose flour with oat flour, and the refined sugar with raw honey.

Besides the fact that they make a perfect finger food, ideal for packed lunches or an on-the-go healthy snack, they are easy to make – just whip up the ingredients in a bowl, bake, and voila. My husband’s approval of these healthy chocolate chip mini muffins prove that they are not only delicious, but also very similar in texture an consistency to traditional muffins. The honey adds just the right amount of sweetness, the Greek yogurt adds moistness, and the chocolate chips ensure every bite is full of decadence.

Ingredients
    1/4 cup extra virgin coconut oil
  • 3/4 cup Greek vanilla yogurt
  • 1/2 tsp. vanilla bean powder (or 1 tsp. pure vanilla)
  • 2 large organic eggs (or 2 chia eggs)
  • 1/2 cup raw honey (or brown rice syrup)
  • 1 cup all-purpose flour
  • 1/2 cup oat flour or quick oats
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/8 tsp sea salt
  • 1/2 cup dark chocolate chips or carob chips
Directions

Preheat the oven to 350 degrees. Heat the coconut oil in the microwave for about 1 minute or until melted. Whisk the eggs in a large bowl then add the coconut oil, yogurt, vanilla, and brown rice syrup and mix until combined.

Combine the all-purpose flour, oat flour, baking soda, baking powder, cinnamon, and salt in another bowl then add to the wet ingredients. Stir with a large wooden spoon until smooth and combined.

Fold in the chocolate chips then transfer the batter to a mini muffin tin lined with muffins liners. Dollop a heaping teaspoon into each liner. Bake for 10-12 minutes or until a toothpick inserted comes out clean. Remove immediately from the oven to avoid over-baking.

    We’re big fans of muffins at our house too! If I have some in the fridge, my husband is far more likely to grab one for breakfast or his morning snack. The recipe looks wonderful .. with all natural ingredients and greek yogurt for a boost of protein. Thanks (as always) for another great recipe

  • We are huge fans of muffins around here as well. We just made Spice Bar muffins today! My theory is the larger the muffin the less the kids get. Smaller ones they seem to think they need to eat like 50 (ok maybe not that many) before they are full.

  • These look so good! I love mini muffins, especially when they are bite-sized, hahaha! I haven’t baked with coconut oil, but maybe I will have to give it a try. I also need to look up Chia Eggs because I have no clue what they are.

    • Chia eggs are so simple to make – just soak 1 tablespoon of chia seeds in 3-4 tablespoons of warm water until soft and tripled in size. They have the same consistency as eggs!

  • Yum! This looks so yummy and super easy to make I am going to have to try this recipe. I think my kids would enjoy this for a breakfast treat.

  • You could tell me that these are fat free or vegan and I would still eat an entire batch in one sitting. I love chocolate chip anything. Give me all the chocolate and I will be your best friend (kind of like my dog, lol).
