Frozen Mango Banana Coconut Smoothie

Yesterday was mommy’s day off, well, at least from the kids (thanks to the grandparents!).  As always, I had every intention on laying down the ENTIRE day, but (as always) I ended up finding a million things to do!

I “worked” in the morning (i.e., did a workshop at Little Gems Consignment Boutique) then came home and prepared lunch, organized my closet and put away all my winter clothes (finally), and then found a few other things to do until that voice in my head said, “Enough! Go relax!”

I decided to take advantage of the lovely weather by catching some rays in my backyard with this delicious treat that I whipped up NOT for my son, but for myself (although I have every intention of making it for him too.)  Someone had to be the taste-tester, right?!


I love frozen fruit smoothies, especially in the summer!  They are one of those refreshing, guiltless pleasures in life.  The frozen mangoes give the smoothie that ice-cream consistency and the coconut milk adds such a creaminess, without adding all the fat and calories.

No need to spend your time contemplating how much of it will actually end up sticking right to your hips.  You can enjoy this treat guilt-free (except for the fact that you enjoyed it even MORE because you added Malibu rum to it and because the kids were out of the house and you actually had some well-deserved mom time!).

Oh, and by the way, it’s a perfect summer treat for your kids too! ;-)

(Yields about 2 cups)
1 large mango, frozen (or fresh)
1 ripe banana, fresh (or frozen)
1 tbsp. coconut flakes
1 tbsp. flax seed
1 cup coconut milk (or milk of choice)
1 tsp. vanilla extract
1 tsp. extra-virgin coconut oil (optional)
*You can use fresh or frozen fruit, depending on the consistency desired.  I used frozen mango and fresh bananas.


Chop banana into 2-3 inch pieces and add to large food processor.  Remove mango (previously frozen and chopped into 2-3 inch pieces) from the freezer and add to the processor with all the other ingredients.


Blend until smooth and creamy and well combined.  This makes quite a thick smoothie (thick enough to almost not be able to drink with a straw!) so if you prefer it less dense you can add more milk and blend until you get the desired consistency.


It’s as simple as that!  Enjoy your portion ice cold with a straw or scoop up with a spoon.


Serve to toddlers in their favourite sippy cup, or prepare some for baby.  You can also add baby cereal or oats to thicken it more, if desired.
