This warming, comforting detox cabbage soup is only made with a few simple ingredients, yet it’s full of ingredients and spices with detoxifying and anti-inflammatory properties. Time for a resolution check in. How are yours going? Personally, I’ve never really been much of a resolution maker. In fact, I think they’re over-rated. Resolutions always seem to come with a price – that feeling of failure or defeat for not having accomplished our goals from the year gone by. I prefer viewing January as the perfect time to recharge my system and give my digestive system a do-over. A sort of return to the cleaner eating habits and regular workout schedule that always seems to take a back seat to the consumption of all those sweets, desserts, and alcohol over the holidays.

The cabbage is the star of the recipe, a blank canvas for all the other delicious flavours in this soup that make it so rich and flavourful. As opposed to throwing everything into the pot at once, I prefer cooking the ingredients a few at a time, coaxing out all the natural sugars and seasoning step by step. This soup does not have any grains or noodles and only a small amount of heart-healthy fats from the olive oil. The rest of the soup is loaded with vegetables and spices, like celery, carrots, turmeric, and ginger, that help nourish  and cleanse the body.

This comforting, vegan soup is my homage to the infamous cabbage soup diet craze from the 90’s, but with so much more depth and flavour. And let me clarify, you do not have substitute it for every meal for days on end. Instead, you can make a huge batch and enjoy it through the week, or store some in the freezer and save for a later date – when perhaps you’ve overdone it at the dinner table again!

Ingredients
    1/4 cup extra virgin olive oil
  • 1/2 medium onion, finely minced
  • 3 celery stalks with leaves, finely diced
  • 2 large carrots, peeled and finely diced
  • 1 tbs. freshly grated ginger root
  • 1 tbs. freshly grated turmeric root
  • 2 medium Russet potatoes, finely diced
  • 1 whole head of cabbage, stem and large ribs removed, roughly chopped
  • 1 cup whole canned tomatoes with juice
  • sea salt and black pepper to taste
  • Enough water to cover the vegetables
Directions

Heat the oil in a large pot on medium heat for 1-2 minutes. Add the onions, celery, and carrots, ginger, and turmeric and sauté on medium for 8-10 minutes, or until translucent. (If they begin to burn add more oil or reduce the heat to medium-low). Season with salt and pepper to taste.

With the heat still on medium (or medium-low) dice the potatoes and roughly chop the cabbage then add to the pot along with the whole tomatoes and juice. As they cook, break apart the tomatoes with a fork or knife. Fill the pot with enough water to just cover the cabbage.

Cover with a lid and bring to a boil. Once boiling, remove the lid and cook for about 30 minutes or until the potatoes and cabbage are fork tender. Store in the fridge for up to 5 days and in the freezer for up to 3 months.

    Oh my. I remember doing this about 5 years ago. I lost like 7 pounds in 4 days. It was brutal but it definitely works and the great part is the weight didn’t come back and I used it to jumpstart my journey to healthy eating. I think I need to do this again. Thanks for the reminder.

    I LOVE cabbage soup, so much! I always forget that until I have it again though, or I just don’t end up making it for myself. However, I’m in Canada and it’s colder than Mars here right now (literally) so it’s the ideal time to whip up this recipe. The ginger and turmeric you’ve incorporated is great for the immune system too!
    I’m on a cleanse right now so, adding this in, will be a fantastic aid.

  • WOW, I have not made this in years! I will be heading to the store as soon as the weather breaks to grab the ingredients. This recipe was very useful to me when I was detoxing and I’m on a journey to start taking better care of myself and my family since we all are getting older. I’ve heard more people adding turmeric and ginger to many dishes now, I need to add them to my soup and see how everything will taste. I’m pinning this and thanks!

  • Cabbage is one of my favorite vegetables, and I like to eat it in a variety of ways. I’ve made different soups with it, but haven’t added turmeric into the mix. And yes, I did try the cabbage soup craze once. Overall, I like that this recipe is meant to serve as a detox.
