These crunchy peanut butter granola bars are DEE-licious.

Not only are they are made with super rich (and healthi-er) ingredients, their texture is sheer perfection-super crunchy on the outside, dense and chewy on the inside.

One bite and you’ll be hooked. Trust me.

Wanna know why? Firstly, how can you go wrong with the combination of creamy peanut butter and rich chocolate?

Secondly, these crunchy peanut butter granola bars are the epitome of ‘healthy’ decadence.

Thirdly, these are just DEE-licious! (Have I mentioned that already?)

Sure, peanut butter and chocolate aren’t commonly referred to as ‘healthy’ snacks, however, on a positive note, a little goes a long way in this recipe.

As for the other ingredients, no one can deny that raw honey, omega 3-rich coconut oil, and fiber-rich oats aren’t healthier options than what you regularly find in traditional granola bars.

Word to the wise; double or triple the recipe when you prepare these. I’ve made them a few times already and forget to do so each time-which means they are gone before I can even stock a few in the freezer.

On a side note, be sure to allow these to cool for 5-7 minutes before cutting them. If they are too hot they will stick to the knife and will be difficult to cut properly.

On the other hand, do not wait too long to cut them. If they harden completely before cutting there’s a greater chance they will break apart when you do cut them.

Ingredients
    2 cups rolled oats
  • 2 tbs. extra virgin coconut oil
  • 1/2 cup all-natural peanut butter
  • 1/3 cup raw honey
  • 1/4 tsp. baking soda
  • 1/4 tsp. sea salt
  • 1/3 cup semi-sweet chocolate chips
Directions

Preheat oven to 350 degrees.

Heat the coconut oil, peanut butter, and honey in a medium bowl in the microwave for 45 seconds-1 minute, or until completely melted. Stir to combine then transfer to a larger bowl.

Add the remaining ingredients and stir to combine with a large mixing spoon. Transfer the mixture to a small baking dish, lined with parchment paper.

Bake for 20-25 minutes or until a toothpick inserted comes out clean (minus the melted chocolate that will stick to the toothpick!) and the top of the granola bars are lightly browned and crispy.

Allow to cool for 5-7 minutes then cut into desired portions. Store in the fridge in an airtight container for one week (I doubt they’ll last long!) or in the freezer for up to 3 months.

    I have made these twice now and they are soooooo good! I have added flax seeds, chia seeds, pumpkin seeds, sliced almonds, raisins, almond butter and a few butterscotch chips. Great base recipe to play with. This is now a staple at our house!!

    I made a few days ago these. They burnt a bit on the top and crumbled completely so I used as granola and they tasted great! Any tips on how to make the bars stay together?

    I made these and oh my are they delicious. They are nice and crunchy on the outside but soft and chewy on the inside. Packed with flavor. In my second attempt I added dried cranberries, chopped walnuts, chopped dates and chia seeds for a greater health impact. They are scrumptious! Thank you for a wonderful recipe!

    These turned out really dry for me 🙁

    • Really? That’s too bad! I do think the consistency of the peanut butter and honey might have something to do with it. If I were you I’d try them again and increase the wet ingredients, preferably the honey so they’ll stick better and be more moist!

    I made these today and my daughter loved them, so did my parrot.
    They were super easy to make and nice and crunchy but not so much that they were hard as a rock to bite into. My daughter loved this about them.

  • Oh what a fun and healthy granola bar that I KNOW my picky 5 year old will love. I definitely need to make these for him and I already thought of like 5 other things I can add to them.

    • I honestly don’t know who wouldn’t like these…unless, they don’t like peanut butter! 😉

      • I don’t either and I don’t know that there are many people who don’t even like peanut butter. I can even make these for my food allergy boy and just substitute with his sunflower seed butter (wanna-be peanut butter haha). Thanks again for the recipe!

    I’m hooked already and I haven’t even made them yet. I think if you use natural unsweetened peanut butter they’d be super healthy. I’m travelling right now – if only I had a kitchen! When I get back home I’ll give them a try.

  • I can understand why you suggest tripling the recipe! If I made a batch of these in my house, my husband would eat them all before I even had the chance to have one! That being said, I think I will have cook up a FEW batches of these delicious sounding granola bars this weekend

    Granola bars are such an easy grab and go snack. I even carry them with me in my bag when we leave the house. This recipe is perfect and sounds amazing!

  • Mmm… I love granola bars! Love how you’ve added peanut butter, too. That would make it more filling and add protein, too. I agree with Amanda about adding chocolate!

    Oh my God, my girls would LOVE these. I’m not a fan of peanut butter myself but I didn’t want to pass my dislike onto my kids so they both love the stuff. I need to make these for them. They’ll go crazy!
