Coconut Chai Granola

‘Tis the season for warm, comfort foods. Granola is no exception, especially this homemade coconut chai granola. With nutty coconut, crunchy pumpkin seeds, buttery extra virgin coconut oil and earthy chai spice, this coconut chai granola is packed with flavour and is sure to be a family hit.

We all know that oats are a great source of fiber, which makes them a great whole-grain component of a balanced breakfast, and a healthy way to start the day. As much as my family loves it, I am unfortunately not consistent in terms of how often I prepare it – sometimes it’s once a week, and other times every few months (until I realize how much we all miss it!). Albeit, it involves some patience since it takes a while to cook, but the results outweigh the frequent visits to the kitchen. My suggestion is to make large batches, divvying up the base oat mixture into a few different baking sheets then adding unique flavour combinations, such as matcha and vanilla, chocolate and cherry, and this coconut chai. Granola lasts for such a long time, as long as it’s stored properly to maintain freshness. When I make several batches I store them in Mason jars then line them up on the kitchen shelves with the cereals and let the kids chose which granola flavour they prefer. Granola isn’t just reserved for breakfast – it makes for a wholesome and portable snack food. Which brings me to my new reason why granola so amazing; it’s unbelievably versatile, both in flavour and serving options, like these:

1. Serve over Greek yogurt.
2. Make a parfait by layering the granola with Greek yogurt and fresh berries.
3. Add to cereal for extra crunch and flavour.
4. Use as a topping for frozen yogurt or ice cream.
5. Add into pancake or waffle batter.
6. Mix with other dried nuts, fruits, and seeds.
7. Use as a filling for crepes.
8.  You can add extra dried fruit such as dates, raisins, apricots and apples to granola as well as nuts such as slivered almonds.

Ingredients
    1/2 cups rolled oats
  • 1/2 cups quick oats
  • 1/2 cup raw honey or pure maple syrup
  • 1/2 cup extra virgin coconut oil
  • 1 heaping tsp. chai spice blend
  • 1 cup coconut flakes
  • 1/2 cup raw pumpkin seeds (or other dried fruit or nut)
  • 1/4 tsp. pink Himalayan sea salt
Directions

*For a homemade version, combine 1 1/2 tsp. cinnamon, 1 tsp. cardamom, 1 tsp. allspice, 1/2 tsp.ground ginger, 1/8 tsp. cloves

Preheat the oven to 325 degrees. Heat the coconut oil and honey in a microwave on high heat for about 1 minute or until melted. Stir to combine. Combine all the ingredients (minus the pumpkin seeds) in a large mixing bowl and mix with a large wooden spoon until all the oats are coated with the wet ingredients.

Pour the granola onto a large baking sheet lined with parchment paper then spread the granola mixture evenly in the pan. Cook for 30-35 minutes, tossing every 5-7 minutes or until lightly golden. Remove immediately from the oven and set aside to cool. Store in an air tight container in the pantry for up to 2 months.

    I love granola and that you can do so many different things with it. I like to add chocolate chips and/or nuts to make it a tasty snack by itself.

    • I don’t usually add nuts and chocolate…and I don’t why! Maybe because I don’t want huge chunks in there for the kids? Next time, I will 😉

  • This looks amazing! I love granola and eat it every morning! Sometimes I even use it as cereal and pour milk over it! Your pictures look amazing! Teach me your ways!!!

    • I also eat granola as my ‘cereal!’ As for ‘my ways’ there really aren’t any, lol! I’m slowly learning how to use my camera…I switch between auto and manual (adjusting the ISO) and just keep it up until I get some good pics! lol! I’m sincerely flattered by your comment though because I’m trying so hard to take ‘professional’ pics but I’m never satisfied with the results!

    • You have to try it, homemade granola is SO easy to make…and so much healthier than store-bought (because you know exactly what’s going in it!).

    wow, so easy to make. I love adding granola in my yogurt in the morning or a mid day snack.

    • It is, although you have to be very attentive while it’s in the oven! I’ve tried a few times to up the temperature…then forget to check it and end up with burnt granola! ;-(

    • My kids LOVE when I make them parfaits with yogurt, fresh fruit and granola! I don’t eat dairy so I usually just mix the granola with fruit…or eat it by the handful, lol!
