Last year on Valentine’s Day I posted a recipe for Two-Bite Chocolates, which have since become a staple snack in our home. These raw peanut butter cups are a variation of that recipe, made with heart-healthy extra virgin coconut oil, natural sweetener, and bittersweet dark cocoa powder.

The addition of salt heightens the flavour of the bittersweet chocolate and is the finishing touch to these rich, decadent treats. And when I say rich, I mean that usually only one of them will suffice to satisfy your sweet tooth!

Ingredients
    1 cup extra virgin coconut oil
  • 1/4 cup organic brown rice syrup or raw honey
  • 1/2 cup cocoa powder
  • 6 tbs. organic peanut butter (or nut butter of choice)
  • 1/8 tsp. salt (optional)
Directions

Blend the coconut oil in a small food processor with the cocoa powder and agave until smooth. In the meantime, heat the peanut butter in a small bowl in the microwave for 20-25 seconds or until the peanut butter has melted and has a somewhat liquid consistency.

Scoop 1 heaping tsp. of the chocolate mixture into a 16 cup muffin tin. Using the back of the spoon, spread the mixture as evenly as possible or gently tap the muffin tin on your countertop.

Dollop about 1/2 tsp. of peanut butter onto each piece of chocolate then layer over another teaspoon of chocolate.

Place the entire tray in the freezer and let sit for at least 4-5 hours. Once the chocolate is solid, remove each peanut butter cup from the muffin tin and store in a zip-lock bag in the freezer. Serve immediately or consume within 5-7 minutes after removing from the freezer as they will soften quickly!
