Overnight oats have become a staple recipe in my home. Long gone are the mornings when I stood by the stove preparing traditonal oats. Mornings are so much easier now that I can prepare breakfast the night before!

It’s simple, just mix ingredients in a large bowl then let sit overnight in the fridge, and in the morning you’ll have a nice bowl of ready-to-serve, plump, dense, and delicious oats!

The kids loved these blueberry overnight oats, probably moreso than my Pumpkin Pie Overnight Oats and Peanut Butter Banana Overnight Oats. There’s just something about the creamy texture and richness combined with the fresh fruit (not to mention, my kids absolutely love blueberries and mangoes!) that made this one a hit!

Blueberry Mango Overnight Oats

Freeze leftover in an air tight container for up to 3 months. When reheating, add more milk or liquid of choice to soften the oats.

Ingredients
    1 cup gluten-free rolled oats
  • 1/4 cup chia seeds
  • 2 cups unsweetened coconut milk
  • 1/2 tsp. vanilla (optional)
  • 1/4 tsp. cinnamon (optional)
  • 2 tbs. pure maple syrup
  • 1/2 mango, finely diced
  • 1/2 cup blueberries, halved or whole
  • 1-2 tbs. raw pepitas or sunflowers seeds for garnish, if desired
Directions

In a medium bowl mix together all of the ingredients (except for the pepitas) until thoroughly combined. Place in fridge overnight or for at least 2-3 hours to allow the oats and the chia seeds to soak up all the liquid.

When the oats have thickened and are ready to eat, top with additional fresh mango and blueberries and garnish with pepitas, if desired. Serve warm or cold. Store leftovers in the fridge in air tight container for 2-3 days.
