The kids loved these blueberry overnight oats, probably moreso than my Pumpkin Pie Overnight Oats and Peanut Butter Banana Overnight Oats. Ingredients
    1 cup gluten-free rolled oats
  • 1/4 cup chia seeds
  • 2 cups unsweetened coconut milk
  • 1/2 tsp. vanilla (optional)
  • 1/4 tsp. cinnamon (optional)
  • 2 tbs. pure maple syrup
  • 1/2 mango, finely diced
  • 1/2 cup blueberries, halved or whole
  • 1-2 tbs. raw pepitas or sunflowers seeds for garnish, if desired
Directions

In a medium bowl mix together all of the ingredients (except for the pepitas) until thoroughly combined.Β Place in fridge overnight or for at least 2-3 hours to allow the oats and the chia seeds to soak up all the liquid.

When the oats have thickened and are ready to eat, top with additional fresh mango and blueberries and garnish with pepitas, if desired. Serve warm or cold. Store leftovers in the fridge in air tight container for 2-3 days.
