    Wow these are great treats! The pasta dishes are so filling and yummy. Fusilli with Tuna Zucchini and Cherry Tomatoes look very bright and summer-y.

    • I a ton of lentils, year-round! I often make lentil soups (which are necessarily summer-friendly) so that’s why I came up with the cold lentil salad recipe.

  • These recipes all look so delicious! I’ve heard of clean eating, but thank you for the simplified explanation of it! It always sounded like it was harder than you make it seem. I do have a question– can you still use spices with clean eating?

    • I think it’s been made into something bigger (and much more complicated) than it is, when in fact, it’s so simple! And yes, lots of spices!! For example, cinnamon and turmeric have a ton of health benefits!

  • These sound really good. I have a teenage daughter that is vegan, so we are always looking for new and fresh recipes to try. It’s not an easy way of living. It takes a lot of planning and time to prepare for meals.

    • I find it so inspiring when one person in the family makes a healthy lifestyle change, and it encourages everyone else to either continue their healthy lifestyle OR make changes in their eating habits! And yes, being 100% vegan is challenging!

    It’s the first day of summer and I was just wondering about what to do for summer meals. I also like to try something new and somehow get the family into a summer mode of dining.     • Actually, we haven’t had that one in a while since my kids sort of ‘decided’ that they don’t like peas right now! Ugh, toddlers! lol! It is a delicious salad though 😉

    I’ve heard so much about clean eating and often associated it with bland, blah foods. These recipes look scrumptious! These are things I would definitely eat and enjoy. And that strawberry sorbet – it looks delicious! A must try!

    I like the sorbet, I could go for some right now. Clean eating was how I relieved my symptoms from Ulcerative colitis for years but after a recent surgery I have stopped eating this way. I have such a hard time getting back once I quit but I know it is best. It is hard now because I have so many restrictions like no raw fruit or veggies!

    • I really do believe that clean eating and following a healthy lifestyle in general can have so many positive effects on one’s health. It really is a lifestyle change…I’m sure if you put your mind to it, you will get back on track!

    All of these recipes look so fresh and delicious. I try to eat as healthy as I can, but summer barbecues and get togethers make it pretty difficult to do. The Vegan Bolognese, Apple Nachos and Strawberry Sorbet caught my eye immediately.

    • I have to say that I LOVE that vegan bolognese! I love lentils in general and that is such an interesting way to serve them. I’m all about zoodles right now too (took me a while, lol!). A friend of mine made those apple nachos a few weeks ago and brought them to a bbq…she said she got rave reviews! 😉

    All of those recipes look so delicious! This post really drives home the fact that clean eating doesn’t have to be tasteless eating. A lot of these recipes are also really creative, too. I love it.

  • I love these recipes!! It has been such a struggle for me this year to get better at eating clean again!! The three ingredient strawberry sorbet looks and sounds amazing!
